The tender beef filling, spiced with cumin, garlic, and chilli, is balanced by the sweetness of corn and the tang of fresh tomatoes and red peppers. The tacos are finished with a homemade green sauce made from cilantro, jalapeño, and lime, adding a refreshing kick. Air-fried to a golden crisp, these tacos are quick, easy, and packed with bold flavours. Ideal for a fun dinner that’s both satisfying and full of texture!

Ingredients
    For the filling:
  • 1 tbsp olive oil
  • 350 g minced beef
  • 1 tsp garlic powder
  • 1/2 tsp chilli powder
  • 1 tsp cumin
  • 1 tsp black pepper
  • 3/4 tsp salt (or to taste)
  • 1 tsp oregano
  • 1 shallot (chopped)
  • 200 g canned chopped tomatoes
  • 1 red pepper (diced)
  • 3 tbsp sweet corn
  • 115 g cheddar cheese
  • 115 g mozzarella cheese
  • For the tortillas:
  • 250 g plain flour
  • 5 g salt
  • 135 g boiling water
  • 4 g baking powder
  • 45 g melted butter
  • For the green sauce:
  • 1 bunch cilantro (about 30g)
  • 1 jalapeño (deseeded if preferred)
  • 2 garlic cloves
  • 35 g Parmesan cheese (grated)
  • 1 lime (juice)
  • 3 spring onions
  • 2 g salt (or to taste)
  • 50 g yogurt
  • 50 g olive oil
Instructions
    Prepare the Tortilla Dough:
  1. In a bowl, combine the flour, salt, and baking powder. Create a well in the centre and add the boiling water and melted butter. Stir with a spoon until combined, then knead by hand until the dough is smooth and elastic. Cover the dough and let it rest for at least 15 minutes, or up to 2 hours.
  2. On a lightly floured surface, knead the dough gently. Divide it into 20 equal portions, rolling each into a ball. Flatten each ball with your palm and roll it out into a circle about 3.5-4 inches in diameter. The thinner, the better. Dust the surface and rolling pin as needed. Stack the tortillas with parchment paper between them to prevent sticking.
  3. Cook the Filling:
  4. Heat olive oil in a pan over medium heat. Add the minced beef and cook until browned. Stir in the garlic powder, chilli powder, cumin, black pepper, salt, and oregano. Add the chopped shallot and cook for 2 minutes. Then, add the diced red pepper and canned tomatoes. Cook for 10-15 minutes, or until the sauce thickens. 3. Cook the Tortillas:
  5. While the filling cooks, prepare the tortillas. Cook each tortilla on a Cusimax hot plate or in a pan over medium heat for 30-40 seconds on each side until lightly browned.
  6. Assemble the Tacos:
  7. Once the filling is ready, remove it from the heat and stir in the sweet corn. Mix the cheddar and mozzarella cheeses together.
  8. Place a small amount of the cheese mixture in the centre of each tortilla, followed by about 2 tablespoons of the beef filling. Fold the tortillas and place them in a greased air fryer basket. Sprinkle more cheese on top. Air fry at 200°C for 7-8 minutes, until the tacos are crispy and golden.
  9. Make the Green Sauce:
  10. In a food processor, combine all the sauce ingredients and blend until smooth.
  11. Serve:
