Simple Ingredients That Pack a Nutritional Punch
One of the things I love most about this recipe is how it transforms everyday ingredients into something truly special. Here’s a quick look at the stars of the show:
Cottage Cheese: You can make your own fresh cottage cheese from full-fat milk and lemon juice, which is super rewarding and tastes amazing. But if you’re short on time, using 200 g of ready-made cottage cheese works just as well — just be sure to drain it well to avoid excess moisture.
Dates: These naturally sweet little gems replace refined sugar and give the bites a soft, sticky texture. I prefer Medjool dates because they blend smoothly and have a rich flavour, but any soft pitted dates will do.
Blueberries: Fresh blueberries add a burst of juicy freshness in every bite, making these treats feel a little indulgent while staying clean and healthy.
Coconut flakes: The subtle tropical flavour of coconut flakes adds a lovely texture and makes the bites look super inviting when you roll them in this final coating.
Vanilla Powder: Just a touch of vanilla enhances all the natural sweetness and rounds out the flavours beautifully.
How to Make Healthy Blueberry Cottage Cheese Bites
Making Cottage Cheese from Scratch
Making your own cottage cheese is much simpler than it sounds, and the result is wonderfully fresh and flavourful. Gently heat full-fat milk in a saucepan until it’s just about to boil, then stir in lemon juice — this helps the milk curdle and separate into curds and whey. If needed, a little extra lemon juice will do the trick.

then gather the cloth into a bundle and hang it to drain. After about an hour (or overnight in the fridge), you'll have beautiful, soft cottage cheese ready to use. If you're short on time, you can absolutely use good-quality ready-made cottage cheese instead — just make sure to drain it well so your bites hold together properly.

Preparing the Mixture
Once your cottage cheese is prepped, it’s time to bring everything together. Start by blending dates into a sticky paste using a food processor. In a bowl, mix the cottage cheese, date paste, vanilla, and coconut flakes, kneading everything together until it forms a cohesive mixture.

These Blueberry Cottage Cheese Bites are the perfect no-bake treat — naturally sweet, high in protein, and free from refined sugar. Made with homemade cottage cheese (or ready-made for convenience), soft dates, and juicy blueberries, each bite is rolled in coconut for a deliciously creamy and fruity finish. Ideal for snacking or a light dessert, and easy to prepare with just a few wholesome ingredients.
Ingredients
For the Cottage Cheese (or use 200 g ready-made full-fat cottage cheese, well drained):
1L full-fat milk (4¼ cups)
2tbsp lemon juice
1L ice-cold water (4¼ cups, for rinsing)
For the Bites
100g soft dates (3.5 oz, pitted)
2tbsp desiccated coconut
½tsp vanilla powder (or extract)
14 fresh blueberries (one per bite)
To Garnish
Extra desiccated coconut
Instructions
1
Pour the milk into a saucepan and gently heat until it’s just about to boil — don’t let it bubble over. Stir in the lemon juice and mix gently until the curds separate from the whey. If needed, add a little more lemon juice to help it along. Line a sieve with muslin or cheesecloth and place it over a large bowl. Pour in the curdled mixture and let the liquid drain away. Rinse the curds with ice-cold water to cool and remove any lemony taste. Gather the cheesecloth and twist to form a bundle. Hang it over a bowl or the sink for at least 1 hour to drain completely, or refrigerate overnight for best results. You should be left with around 200 g of crumbly, fresh cottage cheese. If using ready-made cottage cheese, simply drain it well before starting.
2
Pit the dates and add them to a food processor. Blend until smooth and sticky. Add the cottage cheese, date paste, vanilla powder, and 2 tablespoons of desiccated coconut to a bowl. Knead the mixture together with your hands until fully combined and cohesive. Take a small amount of the mixture, flatten it gently in your palm, and place a blueberry in the centre. Fold the edges around the fruit to seal, then roll into a smooth ball. Roll the balls in extra desiccated coconut to coat. You should get around 14–16 bites.
3
Store in the fridge in an airtight container for up to 3 days
Cottage cheese shortcut: For convenience, you can use 200 g of ready-made full-fat cottage cheese—just be sure to drain it well to remove excess moisture.
Milk choice: Full-fat milk gives the creamiest homemade cottage cheese, but semi-skimmed works too if you prefer.
Lemon juice: Fresh lemon juice is best for curdling the milk, but bottled lemon juice works in a pinch.
Dates: Use soft, pitted dates like Medjool for easier blending and natural sweetness. If your dates are dry, soak them in warm water for 10 minutes first.
Storage: Keep the bites refrigerated in an airtight container for up to 3 days. They also freeze well—thaw in the fridge before serving.
Make it vegan: Substitute cottage cheese with a firm tofu blended with a little lemon juice or use a plant-based cottage cheese alternative.
