Ingredients
    For the soup:
  • 500 g parsnips (peeled, cut into cubes)
  • 2 tbsp olive oil
  • 1 pinch of salt & pepper
  • 1 garlic bulb (top cut off)
  • 6 thyme sprigs
  • 200 ml double cream
  • 750 ml veggie stock
  • 1/3 tsp nutmeg (grated)
  • For garnish:
  • Croutons
  • Olive oil
  • Chilli flakes
  • Thyme leaves
Instructions
  1. Roast the parsnips and garlic at 200°C (fan) for 50-55 minutes, or until they’re as soft as a pillow.
  2. Transfer the roasted parsnips and squeezed garlic to a pot, add the leaves from the roasted thyme (discard the stems), then add the cream, stock, salt, pepper, and nutmeg, and use an immersion blender to blitz until smooth.

  3. Return to the stove and bring to a boil.
  4. Serve with croutons, a drizzle of olive oil, chilli flakes, and thyme leaves.
