Ingredients
For the soup:
500g parsnips (peeled, cut into cubes)
2tbsp olive oil
1pinch of salt & pepper
1 garlic bulb (top cut off)
6 thyme sprigs
200ml double cream
750ml veggie stock
1/3tsp nutmeg (grated)
For garnish:

Instructions
Roast the parsnips and garlic at 200°C (fan) for 50-55 minutes, or until they’re as soft as a pillow.
Transfer the roasted parsnips and squeezed garlic to a pot, add the leaves from the roasted thyme (discard the stems), then add the cream, stock, salt, pepper, and nutmeg, and use an immersion blender to blitz until smooth.
Return to the stove and bring to a boil.
