Easy to Make Chocolate Chip Cookie Shots
Mixing the Dough
To make the cookie dough, combine softened butter with white and brown sugars until smooth. Add two eggs and whisk until well blended.
Sift in baking powder and plain flour. Mix gently until a dough forms, then fold in a generous portion of chocolate chips.
Shaping the Cookie Shots
Divide the dough into about 17-18 equal portions. Press each portion firmly into cookie shot moulds, packing it in tightly.
If you prefer a smaller batch, halve the recipe. You can roll any leftover dough into balls and freeze them for future cravings!
Preparing the Cream Cheese Filling
While the cookie shots bake, prepare the cream cheese filling. Whip together cream cheese, double cream, icing sugar, and a splash of vanilla extract until fluffy.
This filling perfectly complements the cookie shell.
Once the cookie shots cool completely, fill each with a teaspoon of Nutella,
then pipe in the cream cheese filling. For a finishing touch, sprinkle grated chocolate on top.

These cookie shots fit any occasion. Serve them at a birthday party, holiday gathering, or enjoy them at home. You can customise the filling with your favourite spreads, like peanut butter or caramel, or mix in crushed nuts for extra texture.

Ingredients
For the Cookie Shots:
200g butter (softened)
100g white sugar
130g brown sugar
2 eggs
1tsp baking powder
400g plain flour
1pinch of salt
200g chocolate chips (milk or your choice)
For the Filling:
18tsp Nutella
220g cream cheese
60ml double cream
40g icing sugar
1tsp vanilla extract
For Garnish:
Grated chocolate
Instructions
Whisk together softened butter, white sugar, brown sugar, and a pinch of salt until smooth.
Add the eggs and whisk until fully incorporated.
Sift in the baking powder and plain flour, then mix with a spatula until a dough forms.
Stir in the chocolate chips.
Divide the dough into 17-18 equal portions. Press each portion firmly into a cookie shot mould, ensuring the dough covers all the edges.
If needed, work in batches and keep any remaining dough in the fridge while the first batch bakes. Alternatively, bake 8 cookie shots and save the remaining dough as cookie balls in the freezer for later use.
Place the filled cookie shot moulds in the freezer while preheating the oven to 180°C (350°F).
Bake the cookie shots for 15-18 minutes or until golden brown.
Let the cookie shots cool completely in the moulds before removing them to avoid breaking.
While the cookie shots cool, whisk together cream cheese, double cream, icing sugar, and vanilla extract until firm peaks form, then transfer the mixture to a piping bag fitted with a star nozzle.
Once the cookie shots are fully cooled, carefully remove them from the moulds.
Spoon 1 tsp of Nutella into each cookie shot, then pipe the cream cheese filling on top.
Chilling the Dough: If the dough becomes too soft to work with, refrigerate it for 15-20 minutes to make it easier to handle.
Dividing the Dough: Divide the dough into 16-17 equal balls and fill the cookie shot moulds. Make sure to press very firmly so the dough fills all edges. You may need to work in batches; keep the remaining dough in the fridge while the first batch bakes.
Batch Options: If you prefer to make a smaller quantity, you can halve the ingredients to make only 8 cookie shots. However, I recommend making the full batch—bake 8 cookie shots and form the remaining dough into balls. Store the dough balls in an airtight container in the freezer for later use.
Baking Frozen Dough: Whenever you want fresh cookies, simply drop the frozen dough balls onto a baking tray lined with parchment paper, making sure to leave enough space between them, and bake as cookies.
Storage: The cookie shots can be stored in an airtight container in the refrigerator for up to 3 days.
Customisation: Feel free to customise the filling by using your favourite spreads, such as peanut butter or caramel. You can also mix in crushed nuts or add a hint of spice, like cinnamon, for a unique flavour twist.
Baking Tip: Ensure that the cookie shots cool completely in the moulds before removing them to help prevent breakage. If any cookie shots stick, gently run a knife around the edges to loosen them.
Garnishing: For delightful presentation, experiment with different toppings, such as sprinkles, crushed cookies, or drizzled chocolate. Grated chocolate is also a great option to enhance the visual appeal.
Serving Suggestions: These cookie shots are perfect for parties, dessert tables, or as a fun treat for kids and adults alike. Pair them with milk or coffee for a delightful experience!
