Next, scoop about a tablespoon of pistachio cream and place it in the centre of your filo petals. This is where all the magic happens, so be generous with that cream!
Fold It All Together:
Now, fold one petal over the pistachio cream, then fold over the others, wrapping the filling inside. Once it’s all tucked in, flip the bun over so the seam is underneath, and place it on your baking tray.
Butter & Bake:
Finally, brush the top of each bun with the remaining butter and pop them in the oven for 15 minutes. They’ll bake up golden and crispy, just like you want them!

6sheets filo pastry
40g unsalted butter (melted)
6tbsp pistachio cream
Icing sugar (for dusting)
Instructions
Preheat your oven to 190°C and line a baking tray with parchment paper. Lay one sheet of filo pastry on a clean, flat surface and lightly brush it with melted butter.Now, pinch the middle of two opposite sides of the filo pastry and push them gently towards the centre, to create a gathered shape. Repeat with the other two opposite sides until you’ve created a beautiful flower-like bundle.
Place 1 tablespoon of pistachio cream in the centre of the pastry. Fold one “petal” over the filling, then repeat with the remaining petals to enclose it. Carefully turn the bun upside down and place it on the prepared baking tray.
Repeat the process with the remaining filo sheets and pistachio cream. Brush the tops of the buns with the remaining melted butter. Bake for 15 minutes or until golden brown. Allow the buns to cool slightly, then dust with icing sugar before serving.
Filo Pastry Tips: Keep unused filo sheets covered with a damp towel while working to prevent them from drying out.
