Now, pinch the middle of two opposite sides of the filo pastry and push them gently towards the centre, to create a gathered shape. Repeat with the other two opposite sides until you’ve created a beautiful flower-like bundle.

Add the Pistachio Cream:

Next, scoop about a tablespoon of pistachio cream and place it in the centre of your filo petals. This is where all the magic happens, so be generous with that cream!

  • 6 sheets filo pastry
  • 40 g unsalted butter (melted)
  • 6 tbsp pistachio cream
  • Icing sugar (for dusting)
Instructions
  1. Preheat your oven to 190°C and line a baking tray with parchment paper. Lay one sheet of filo pastry on a clean, flat surface and lightly brush it with melted butter.Now, pinch the middle of two opposite sides of the filo pastry and push them gently towards the centre, to create a gathered shape. Repeat with the other two opposite sides until you’ve created a beautiful flower-like bundle.

  2. Place 1 tablespoon of pistachio cream in the centre of the pastry. Fold one “petal” over the filling, then repeat with the remaining petals to enclose it. Carefully turn the bun upside down and place it on the prepared baking tray.

  3. Repeat the process with the remaining filo sheets and pistachio cream. Brush the tops of the buns with the remaining melted butter. Bake for 15 minutes or until golden brown. Allow the buns to cool slightly, then dust with icing sugar before serving.
