Classic Pastry with a Nutty Twist

These Pistachio Puffs elevate the classic puff pastry into something extraordinary. A smooth pistachio cream is tucked inside golden layers of pastry for a flavour-packed bite. Brushed with egg wash for a golden finish, each puff is as visually stunning as it is delicious. Simple ingredients come together to create a memorable treat.

Quick and Easy to Make: Pistachio Puffs

Making these Pistachio Puffs is simple yet impressive. Begin by unfolding a sheet of puff pastry, which you can easily find at most supermarkets in the frozen section. Cut the pastry into 12 equal squares, each approximately 8cm x 8cm. Next, mentally divide each square into four smaller sections, like a grid. In two opposite sections, use a knife to make six thin strips through the pastry.

Assembling the Pistachio Puffs

Now, place half a teaspoon of pistachio cream in the centre of the square that is free of cuts. Carefully fold the other square over the pistachio cream, ensuring the edges align. Use a fork to press the edges together, sealing in the filling.

To create the signature look, take one strip from one side and lay it over the top of the pastry, then take another strip from the opposite side and lay it over the first. Continue crisscrossing the strips until all strips are used. This will give your puffs a beautiful, delicate design.

Baking the Pistachio Puffs

Once assembled, arrange the puffs on a baking tray lined with parchment paper. Prepare an egg wash by mixing an egg yolk with a splash of milk, then brush the top of each puff generously to give them a golden, glossy finish.

Description

These Pistachio Puffs are a delightful treat, combining flaky layers of golden puff pastry with a sweet and nutty pistachio filling. Perfectly sized for snacking or sharing, these puffs offer a satisfying crunch on the outside, with a rich, creamy pistachio centre that melts in your mouth. Easy to make yet impressive, they’re ideal for special gatherings or a cosy afternoon treat, finished with a dusting of icing sugar.

Ingredients
  • 320 g puff pastry (1 sheet, approx. 24cm x 36cm)
  • 6 tsp pistachio cream
  • 1 egg yolk (for egg wash)
  • 1 tbsp milk (for egg wash)
  • Icing sugar (for dusting)
Instructions
  1. Preheat your oven to 200°C/390°F (fan).
  2. Unfold the puff pastry sheet and cut it into 12 equal squares, about 8cm x 8cm each.
  3. Mentally (or lightly score if it helps) divide this square into four equal sections, like a grid with four smaller squares within it. On one of these smaller squares, make 6 cuts from top to bottom, creating thin strips. Do the same on the opposite square. This will leave two solid squares: one fully attached to the strips and one only connected in the centre.
  4. Place 1/2 tsp of pistachio cream on the solid square that is fully attached to the strips. Cover it with the opposite square and press the edges together using a fork to seal.

  5. Starting with one strip, gently fold it over the filled square. Repeat with the strip on the opposite side, alternating strips until all are folded over. Repeat this process for the remaining pastry squares.
  6. Arrange the filled pistachio puffs on a baking tray lined with parchment paper.
  7. In a small bowl, mix the egg yolk with the milk. Brush the tops of each puff with the egg wash.
  8. Bake for 15 minutes, or until golden brown.
  9. Allow the puffs to cool, then dust with icing sugar. Enjoy!
