Creating a delicious and gluten-free potato wrap starts with choosing the right ingredients. For this recipe, you’ll need thinly sliced potatoes, which form the crispy base of the wrap. Opt for high-quality, fresh ingredients like aromatic pesto, creamy burrata, ripe tomatoes, and peppery rocket (arugula) to elevate the flavour profile. Grated Parmesan cheese adds an extra layer of crispiness and savoury taste, making every bite irresistible.
Preparing the Potato Base
Begin by slicing your potatoes thinly using a mandolin or vegetable peeler. Rinse and drain the slices to remove excess starch, ensuring they bake up crispy.
Arrange the potato slices in overlapping layers on a parchment-lined baking tray, then drizzle with olive oil, brush with an egg wash,
and sprinkle generously with Parmesan cheese. Bake until golden and crisp, creating a sturdy base for your wrap.
Assembling Your Wrap
Once the potato crust is baked to perfection, flip it over
and spread a layer of vibrant pesto evenly.
Layer on fresh rocket, juicy tomato slices, and creamy burrata. Season with salt, pepper, and a sprinkle of chilli flakes. Drizzle with olive oil for added flavour.
Fold the potato crust over the filling to form a delicious wrap. This combination of crispy, creamy, and fresh ingredients creates a truly satisfying meal.

1 burrata
Chilli flakes

Instructions
Preheat your oven to 200°C (fan).
Slice the potatoes thinly using a mandolin or vegetable peeler. Rinse, then drain.
Arrange the potato slices on a parchment-lined baking tray, overlapping to form 2 rectangles approximately 20cm*15cm each.
Drizzle with olive oil, brush with egg wash, and sprinkle with grated parmesan cheese.
Bake for 15 minutes or until golden and crispy.
Once baked, flip the potato crusts over. Spread pesto evenly over each crust.

Fold the empty half of each crust over the filling to create a wrap. Enjoy!
Potato Thickness: Ensure to slice the potatoes thinly for a crispy crust. A mandolin or vegetable peeler works best for consistent thickness.
Overlap Carefully: When arranging the potato slices on the baking tray, overlap them to form a sturdy crust base. This helps hold the wrap together when folding.
Golden and Crispy: Keep an eye on the potato crust while baking to achieve the desired golden colour and crispiness. Adjust baking time as needed based on your oven.
Customise Fillings: Feel free to customise the fillings according to your preference. Experiment with different cheeses, vegetables, or proteins for unique flavour combinations.
Serve Immediately: For the best texture and flavour, serve the potato crust wraps immediately after assembling. They are best enjoyed fresh out of the oven.
