Description

Savour the crunch of golden-baked potato crusts filled with fresh rocket, ripe tomato, and creamy burrata, all drizzled with vibrant pesto and a hint of chilli flakes. These wraps offer a delightful blend of textures and flavours in every bite.

Ingredients
  • 200 g potato (thinly sliced)
  • 30 g parmesan (grated)
  • egg wash (1 egg yolk + 1 tbsp milk)
  • 2 tbsp pesto
  • 1 Handful of arugula ((rocket))
  • 4 slices of large tomato
  • Salt and pepper (to taste)
  • 1 burrata
  • Chilli flakes
  • Olive oil
Instructions
  1. Preheat your oven to 200°C (fan).
  2. Slice the potatoes thinly using a mandolin or vegetable peeler. Rinse, then drain.
  3. Arrange the potato slices on a parchment-lined baking tray, overlapping to form 2 rectangles approximately 20cm*15cm each.
  4. Drizzle with olive oil, brush with egg wash, and sprinkle with grated parmesan cheese.
  5. Bake for 15 minutes or until golden and crispy.
  6. Once baked, flip the potato crusts over. Spread pesto evenly over each crust.
  7. On one side of each crust, layer arugula, tomato slices, and burrata. Season with salt, pepper, chilli flakes, and a drizzle of olive oil.
  8. Fold the empty half of each crust over the filling to create a wrap. Enjoy!
