Roasted Garlic Dip is a creamy and irresistible dip that combines the rich, caramelised flavours of roasted garlic with tangy yogurt and zesty lime juice. The garlic cloves are roasted to perfection, resulting in a mellow and sweet taste that beautifully complements the smoothness of the yogurt. Infused with aromatic rosemary and seasoned with a touch of salt and pepper, this dip offers a burst of flavour that will tantalise your taste buds. Whether you're hosting a gathering or simply indulging in a savoury treat, this Roasted Garlic Dip is sure to become a favourite, leaving you wanting more.

Ingredients
  • 1 bulb garlic (peeled)
  • Olive oil (for roasting)
  • 2 sprigs of rosemary
  • 250 ml yogurt
  • 1/2 lime juice
  • Salt & Pepper (to taste)
  • Toasted bread (for serving)
Instructions
  1. Preheat the oven to 200°C (fan-assisted).
  2. Peel the garlic cloves and place them in a small baking dish.

  3. Drizzle enough olive oil over the garlic cloves to cover them, and add 2 sprigs of rosemary. Cover the dish with a lid or aluminium foil.
  4. Roast in the oven for 35-40 minutes or until the garlic is soft and golden.
  5. Once ready, allow the garlic to cool slightly, and then transfer it to a food processor (reserve the oil for other uses).
  6. Add yogurt, lime juice, salt, and pepper to the food processor. Blitz until the mixture is smooth. Taste for seasoning and adjust according to your preference.
  7. Chill the dip in the refrigerator for at least 30 minutes.
  8. Serve the roasted garlic dip with toasted bread and enjoy!
Note

Roasted garlic has a milder and sweeter flavour compared to raw garlic. The long roasting time allows the natural sugars in the garlic to caramelise and develop a rich taste.

If you prefer a stronger rosemary flavour, you can mince some fresh rosemary leaves and add them to the dip after processing for an extra herbal kick.

This dip can be made in advance and stored in an airtight container in the refrigerator for up to 3 days. Just give it a stir before serving.

Feel free to experiment with different herbs and spices to customise the dip according to your taste. Chives, thyme, or a pinch of paprika can add additional layers of flavour.

You can use the leftover roasted garlic oil for sautéing vegetables, drizzling over salads, or adding flavour to roasted potatoes. Store it in a sealed container in a cool, dark place for future use.
