Crisp, golden-brown part-baked bread rolls serve as the base, topped with creamy goat cheese and sweet, succulent roasted cherry tomatoes. The tomatoes, infused with garlic and Mediterranean spices, create a rich, aromatic layer of flavour. The addition of tender long-stemmed broccoli, sautéed with pine nuts and a touch of balsamic vinegar, adds a satisfying crunch and a tangy contrast. Finished with a sprinkle of fresh chives, this dish offers a harmonious balance of savoury and sweet notes that will surely impress.
Preheat the oven to 190C (fan). Place the cherry tomatoes in a baking dish, cut off the top of the garlic bulb and place it in the middle. Drizzle with 2 tbsp olive oil, 1 tbsp balsamic vinegar and sprinkle with Mediterranean spice mix. Roast for 35-40 minutes.
Meanwhile, cut the bread rolls in half lengthwise and place them into another baking dish. Drizzle with olive oil, sprinkle with Mediterranean spice mix and bake for 10-15 minutes or until golden brown. You can place them in the oven after the tomatoes have been in for 20 minutes, so that everything is ready at the same time.
