Ingredients
  • 3 lavash breads (or tortillas)
  • Olive oil spray
  • 10 cherry tomatoes (halved)
  • 240 g skinless, boneless salmon fillet (diced)
  • 2 eggs
  • 100 g cream cheese
  • 150 ml milk
  • Salt and pepper (to taste)
  • 1 bunch of chives (finely chopped)
Instructions

  3. Lightly oil the baking dish and transfer the lavash breads into it, arranging them loosely. Spray or brush the tops with olive oil.
  4. Nestle the cherry tomato halves and salmon pieces between the folds of the lavash.
  5. In a bowl, whisk together the eggs, cream cheese, milk, salt, pepper, and chopped chives(reserve some for garnish) until well combined.
  6. Pour the egg mixture evenly over the lavash and fillings.
  7. Bake for 30 minutes, checking after 20 minutes. If the bread is browning too quickly, cover with parchment paper or aluminum foil.
