In a bowl, combine the chopped salmon, minced garlic, ginger, chives, sesame oil, soy sauce, and cornstarch. Mix well.
Soak 2 rice paper sheets in water and place them on a working surface, overlapping. Place a sheet of nori on top.
Add half of the salmon mixture at the beginning of the nori in a line and roll it. Cut the roll into small pieces using a sharp knife or scissors. Repeat with the remaining ingredients.
Spray the air fryer basket with cooking spray and place the mini rolls inside. Spray the top of the rolls with cooking spray and air fry for 12 minutes at 200°C.
Rice Paper Handling: When soaking rice paper, make sure not to over-soak it, as it can become too sticky and difficult to handle. A quick dip in warm water should be sufficient.
Air Fryer Variations: Cooking times may vary depending on your air fryer model. Keep an eye on the bites towards the end of the cooking time to ensure they are crisped to your liking.
Sauce Pairing: These salmon bites are versatile and pair well with a variety of dipping sauces, such as soy sauce, sweet chili sauce, or a tangy ponzu sauce.
Storage: For best results, enjoy these bites fresh. If you need to store leftovers, keep them in an airtight container in the fridge for up to 2 days. Reheat in the air fryer to regain crispiness.
