Baby carrots – Their natural sweetness intensifies as they roast. Try to use carrots that are roughly the same size so they cook evenly. Larger baby carrots can be halved lengthways.
Honey – A little honey helps the carrots caramelise and gives them a beautiful glossy finish without making the dish overly sweet.
Olive oil – Used for both roasting and whipping the feta, olive oil adds richness and helps bring all the flavours together.
Feta – The star of the creamy base. A good-quality block of feta gives you a much smoother texture than pre-crumbled cheese.
Yogurt – Just a couple of tablespoons soften the feta and help transform it into a lighter, silkier spread. Full-fat plain or Greek-style yogurt works particularly well.
Lemon – Both lemon juice and zest are used, giving the rich feta a fresh, bright flavour.

How to Make Whipped Feta with Honey-Roasted Carrots
Roast the Carrots
Preheat the oven to 200°C/400°F fan and line a baking tray with baking paper. Place the peeled baby carrots on the prepared tray. Drizzle with olive oil and honey, then season with salt. Toss until the carrots are evenly coated, then spread them out in a single layer so they roast evenly.

Roast for about 35 minutes, or until the carrots are tender, golden and lightly caramelised around the edges. If some of the carrots are particularly large, halve them lengthways before roasting so they cook at the same rate as the smaller ones.

Make the Whipped Feta
While the carrots are roasting, prepare the whipped feta. Add the feta, yogurt, lemon juice, lemon zest, olive oil and salt to a food processor. Blend until completely smooth, creamy and silky, scraping down the sides of the processor if needed. Taste before adding too much salt, as feta is naturally quite salty. If the mixture feels too thick, blend in a little extra yogurt or olive oil until it reaches a soft, spreadable consistency.

Assemble and Serve
Spread the whipped feta over a serving plate, using the back of a spoon to create an even layer.
