Instructions

  1. Boil the potatoes in salted water until tender. Preheat the oven to 200°C (fan).
  2. Transfer the potatoes to a greased baking tray. Use a glass to gently crush each potato. Drizzle with olive oil, then season with salt, pepper, and paprika. Bake for 50 minutes, or until crispy and golden.
  3. Meanwhile, place the cherry tomatoes and crushed garlic in a separate baking dish. Drizzle with olive oil, sprinkle with salt, and add the thyme sprigs. Roast for 30 minutes.
  4. To assemble, let the potatoes cool slightly. Arrange the roasted tomatoes on top, then add the rocket and tear the burrata over everything. Add chilli flakes and salt to the tomato juices, then drizzle this over the dish. Serve warm and enjoy!
