Preheat your oven to 200°C/390°F (fan).

Unfold the puff pastry sheet and cut it into 12 equal squares, about 8cm x 8cm each.

Mentally (or lightly score if it helps) divide this square into four equal sections, like a grid with four smaller squares within it. On one of these smaller squares, make 6 cuts from top to bottom, creating thin strips. Do the same on the opposite square. This will leave two solid squares: one fully attached to the strips and one only connected in the centre.

Place 1/2 tsp of pistachio cream on the solid square that is fully attached to the strips. Cover it with the opposite square and press the edges together using a fork to seal.

Starting with one strip, gently fold it over the filled square. Repeat with the strip on the opposite side, alternating strips until all are folded over. Repeat this process for the remaining pastry squares.

Arrange the filled pistachio puffs on a baking tray lined with parchment paper.

In a small bowl, mix the egg yolk with the milk. Brush the tops of each puff with the egg wash.

Bake for 15 minutes, or until golden brown.
