Setting and Shaping

While the mixture is whisking, prepare a 24 cm x 24 cm (9.5 x 9.5 inch) square dish by lining it with cling film and lightly greasing it with a neutral oil. Once your mixture is ready, transfer it into the dish and smooth the top. Cover it with a lightly greased piece of cling film placed directly on the surface, then refrigerate for at least 4 hours, or ideally overnight, until fully set. When ready, dust your work surface with a mix of cornflour and icing sugar, or just cornflour if you prefer. Remove the top cling film

and lift the set fluff out using the cling film, flip it over, peel it off, and dust the top lightly.

  5. While the mixture is whisking, line a 24 cm x 24 cm (9.5 x 9.5 inch) square dish with cling film and lightly grease it with oil. Once ready, transfer the mixture into the dish, then cover it with a lightly greased piece of cling film placed directly on the surface. Refrigerate for at least 4 hours, or until fully set, ideally overnight. When set, mix the cornflour and icing sugar (if using) in a small bowl and dust your work surface using a fine sieve. Remove the top cling film, lift the strawberry fluff out using the bottom layer, and flip it onto the prepared surface. Peel off the cling film, dust the top lightly, then cut into squares of about 4 cm x 4 cm (1.6 x 1.6 inches). Store in the fridge in an airtight container lined with baking paper in a single layer. Do not freeze.

A hand mixer will also work perfectly well, but it may take slightly longer and requires more effort to maintain a consistent texture.

    Make sure the gelatine is fully dissolved in the warm strawberry mixture. Any undissolved bits can affect the final texture and prevent it from setting smoothly.
  • Adjust the honey to taste depending on the sweetness of your strawberries. Riper strawberries will need less sweetener.
  • Work relatively quickly once whisking is complete. The mixture will start to set as it cools, so transfer it to the dish without delay.
