Crispy Rice Paper Toast: Crunchy, Cheesy and Packed with Protein
This Crispy Rice Paper Toast is a quick and delicious way to turn simple ingredients into something seriously satisfying. Layers of rice paper are brushed with egg wash, folded and cooked in a sandwich maker until crisp and golden, with a savoury filling of shredded chicken, sun-dried tomato pesto, spring onion and melted mozzarella tucked inside. Simple Ingredients, Big Flavours
One of the best things about this recipe is that you only need a handful of everyday ingredients to create a toast that is crisp on the outside, cheesy in the middle and packed with flavour. - Rice paper – You will need four sheets to make two toasts. I used square rice paper because it fits easily into my sandwich maker, but 22 cm round sheets work perfectly well too. Simply fold them so they fit comfortably inside your machine.
- Egg and milk – These are whisked together to make the egg wash. Brushing both sides of each rice paper sheet softens it enough to fold and helps create those crisp, layered edges once cooked.
- Sesame seeds – A small sprinkle adds extra crunch and a subtle nutty flavour to the outside of each toast.
- Sun-dried tomato pesto – Only a teaspoon is needed for the whole recipe. Its concentrated tomato flavour works beautifully with the chicken and mozzarella without making the filling too wet.
- Cooked chicken breast – Shredded cooked chicken makes the filling satisfying and protein-rich. This is also a great recipe for using up a small amount of leftover chicken.
- Spring onion – Just a little chopped spring onion adds freshness and a mild onion flavour that balances the richer pesto and cheese.
- Mozzarella – Shredded mozzarella melts into the chicken and pesto while the rice paper becomes crisp around it, giving you that irresistible crunchy-and-cheesy contrast.
- Olive oil spray – A very light spray over the sandwich maker helps the outside cook evenly and become beautifully golden without needing much oil.
How to Make Crispy Rice Paper Toast
Prepare the Egg Wash and Filling
In a small bowl, beat the egg and milk together until well combined. Before you start working with the rice paper, prepare all the remaining ingredients and keep them close to your work surface. Shred the cooked chicken, chop the spring onion and grate the mozzarella so everything is ready to use. This is important because the rice paper starts to soften once it is brushed with the egg mixture, so it is best to work fairly quickly.
Brush and Fold the Rice Paper
Place one rice paper sheet on a clean, flat work surface. I used square rice paper, but round rice paper works just as well. Simply fold and shape it so it fits comfortably inside your sandwich maker. Brush one side of the rice paper with the egg wash, then carefully flip it over and brush the other side too.

Sprinkle a little sesame seed over one quarter of the rice paper. Fold the sheet in half, then fold it in half again to create a smaller layered piece. Set it aside and quickly repeat the same process with the second rice paper sheet.

Assemble the Toast
Keep the sandwich maker cold and switched off while you assemble the toast. Lightly spray the sandwich maker with olive oil, then place one folded rice paper sheet inside with the sesame-seed side facing down.

Spread about ½ teaspoon of sun-dried tomato pesto over the centre of the rice paper. Top with half of the shredded chicken, half of the chopped spring onion and half of the shredded mozzarella. Keep the filling mostly in the middle and leave a small border around the edges to help prevent it from spilling out while cooking.

Place the second folded rice paper sheet on top with the sesame-seed side facing upwards.

Cook Until Crispy and Golden
Close the sandwich maker, then switch it on. Cook until the rice paper is crisp and golden and the mozzarella inside has melted. All sandwich makers are slightly different, so check the toast from time to time rather than relying only on an exact cooking time. Once the first toast is ready, carefully remove it from the sandwich maker. Repeat the same process with the remaining two rice paper sheets, ½ teaspoon pesto, chicken, spring onion and mozzarella. Serve immediately while the rice paper is crisp and the cheese is still warm and melted.
