This Roasted Tomato and Goat Cheese Toast is a delightful blend of flavours and textures, perfect for a light lunch or elegant starter. Crisp, golden-brown part-baked bread rolls serve as the base, topped with creamy goat cheese and sweet, succulent roasted cherry tomatoes. The tomatoes, infused with garlic and Mediterranean spices, create a rich, aromatic layer of flavour. The addition of tender long-stemmed broccoli, sautéed with pine nuts and a touch of balsamic vinegar, adds a satisfying crunch and a tangy contrast. Finished with a sprinkle of fresh chives, this dish offers a harmonious balance of savoury and sweet notes that will surely impress.

Preheat the oven to 190C (fan). Place the cherry tomatoes in a baking dish, cut off the top of the garlic bulb and place it in the middle. Drizzle with 2 tbsp olive oil, 1 tbsp balsamic vinegar and sprinkle with Mediterranean spice mix. Roast for 35-40 minutes.

Meanwhile, cut the bread rolls in half lengthwise and place them into another baking dish. Drizzle with olive oil, sprinkle with Mediterranean spice mix and bake for 10-15 minutes or until golden brown. You can place them in the oven after the tomatoes have been in for 20 minutes, so that everything is ready at the same time.

While the bread and tomatoes are cooking, prepare the broccoli. Heat a pan with 1 tbsp olive oil, add the broccoli, drizzle with the remaining balsamic vinegar and add pine nuts, salt and pepper. Cook for a few minutes, stirring occasionally until the broccoli is tender.

Once the garlic is roasted, let it cool and then squeeze it out.

To assemble, spread 2 cloves of garlic on each toast, top with goat cheese, 2 cherry tomatoes, the cooked broccoli and pine nuts. Garnish with chopped chives and enjoy!
