Discover a Taste of the Mediterranean

Welcome to a delightful culinary adventure with our Roasted Tomato and Goat Cheese Toast recipe! This dish perfectly marries vibrant Mediterranean flavours and satisfying textures, making it a fantastic option for a light lunch, appetiser, or elegant snack. Imagine the creamy goat cheese paired with sweet, roasted cherry tomatoes, all atop crispy bread rolls. This recipe is sure to impress your family and friends with minimal effort.

Perfectly Crispy Part-Baked Bread Rolls

We use part-baked bread rolls as the foundation for this toast. These rolls, which you can find in all major supermarkets, are baked just enough to achieve a soft, airy interior while allowing you to finish them off at home for a perfect crispy crust. If part-baked rolls aren’t available or if you prefer a different bread, feel free to use your favourite loaf. Ciabatta or sourdough can make excellent substitutes, adding their own unique texture and flavour to the toast.

Mediterranean Spice Mix: The Secret Ingredient

One of the highlights of this recipe is the Mediterranean spice mix. This fragrant blend typically combines dried herbs like oregano, basil, thyme, and rosemary. It’s what gives this dish its signature Mediterranean flair. If you don’t have a store-bought spice mix, you can easily make your own by mixing these herbs. This spice mix enhances the roasted tomatoes and complements the goat cheese beautifully, infusing the toast with an authentic Mediterranean taste.

Easy Preparation, Impressive Results

The preparation is straightforward yet yields impressive results. Begin by roasting cherry tomatoes and a whole garlic bulb, which will caramelise and develop rich, sweet flavours.

Cherry tomatoes and a bulb of garlic drizzled with olive oil and balsamic vinegar, ready to be roasted in a baking dish.

While these roast, slice your part-baked bread rolls, drizzle them with olive oil, and season them with the Mediterranean spice mix before baking to a golden crisp.

Sauté the broccoli with pine nuts to add a crunchy, nutty element to the dish.

Once everything is ready, assemble your toasts by spreading the roasted garlic on the crisp bread, layering on the creamy goat cheese, and topping with roasted tomatoes, sautéed broccoli, and pine nuts. A sprinkle of fresh chives adds a burst of colour and freshness, making each bite a delightful blend of flavours and textures.

Instructions

  1. Preheat the oven to 190C (fan). Place the cherry tomatoes in a baking dish, cut off the top of the garlic bulb and place it in the middle. Drizzle with 2 tbsp olive oil, 1 tbsp balsamic vinegar and sprinkle with Mediterranean spice mix. Roast for 35-40 minutes.

  2. Meanwhile, cut the bread rolls in half lengthwise and place them into another baking dish. Drizzle with olive oil, sprinkle with Mediterranean spice mix and bake for 10-15 minutes or until golden brown. You can place them in the oven after the tomatoes have been in for 20 minutes, so that everything is ready at the same time.

  3. While the bread and tomatoes are cooking, prepare the broccoli. Heat a pan with 1 tbsp olive oil, add the broccoli, drizzle with the remaining balsamic vinegar and add pine nuts, salt and pepper. Cook for a few minutes, stirring occasionally until the broccoli is tender.
  4. Once the garlic is roasted, let it cool and then squeeze it out.
  5. To assemble, spread 2 cloves of garlic on each toast, top with goat cheese, 2 cherry tomatoes, the cooked broccoli and pine nuts. Garnish with chopped chives and enjoy!

Note

Bread Roll Alternatives: If you prefer a different type of bread, you can use ciabatta or sourdough instead of part-baked rolls. Just adjust the baking time as needed.

Goat Cheese: For a milder flavour, you can use a soft goat cheese. If you prefer a tangier taste, a more aged or crumbly goat cheese works well.

Broccoli Preparation: To add more flavour to the broccoli, you can add a splash of lemon juice or a pinch of red pepper flakes when sautéing.

Garlic Handling: Roasted garlic can be quite hot, so allow it to cool before squeezing. The garlic will be soft and spreadable, adding a rich, mellow flavour to the toast.

Make-Ahead Tip: The roasted tomatoes and garlic can be prepared ahead of time and stored in the fridge for up to 3 days. Reheat them before assembling the toast.

Serving Suggestion: This dish pairs well with a simple green salad.

Dietary Adjustments: For a dairy-free option, substitute goat cheese with a plant-based cheese alternative.
