Preheat the oven to 200°C (fan-assisted).

Peel the garlic cloves and place them in a small baking dish.

Drizzle enough olive oil over the garlic cloves to cover them, and add 2 sprigs of rosemary. Cover the dish with a lid or aluminium foil.

Roast in the oven for 35-40 minutes or until the garlic is soft and golden.

Once ready, allow the garlic to cool slightly, and then transfer it to a food processor (reserve the oil for other uses).

Add yogurt, lime juice, salt, and pepper to the food processor. Blitz until the mixture is smooth. Taste for seasoning and adjust according to your preference.
