10-Minute Butternut Squash & Purple Sweet Potato Gratin: A Beautiful Shortcut to Creamy Comfort

Who says a gorgeous, restaurant-worthy gratin needs an hour in the oven? This 10-Minute Butternut Squash & Purple Sweet Potato Gratin brings together vibrant orange and purple vegetable ribbons, a fragrant garlic and thyme cream sauce, and two delicious cheeses in one spectacular dish. The vegetables are arranged into an eye-catching flower pattern, with tender layers underneath and a lightly golden Parmesan topping. The clever part? Instead of waiting for the vegetables to slowly soften in the oven, we use the microwave to cook them in just 7–8 minutes, followed by a quick finish in the air fryer or oven. If you’ve enjoyed my Two Potatoes Gratin or Butternut Squash and Gruyère Gratin, you’ll love this colourful, time-saving variation. It’s an elegant side dish that looks far more complicated than it actually is.

Simple Ingredients, Big Flavours

The beauty of this gratin lies in its balance of naturally sweet vegetables, aromatic seasonings and creamy, savoury ingredients. Butternut squash and purple sweet potato have their own distinctive flavours, yet they work wonderfully together, especially when paired with garlic, thyme and cheese. I’ve used these vegetables in completely different ways before, from my silky Butternut Squash Ricotta Pasta to the colourful Purple Sweet Potato Gnocchi with Spinach and Feta. Here, the combination creates beautiful layers with a creamy texture and just the right amount of savoury richness.

Butternut squash

Naturally sweet, tender and beautifully orange. When sliced into thin ribbons, it becomes soft and delicate during cooking, absorbing the flavours of the cream and herbs.

Purple sweet potato

Adds a gorgeous deep-purple colour, subtle earthy sweetness and a slightly firmer, starchier texture that complements the squash perfectly.

Cooking cream

Creates a smooth, rich sauce that surrounds the vegetable layers and keeps everything tender. Single cream works well, while double cream gives a richer result.

Garlic

Freshly grated garlic blends directly into the cream, bringing a lovely savoury depth without overpowering the vegetables.

Fresh thyme

Its delicate, earthy aroma pairs beautifully with sweet vegetables and creamy sauces. A few extra leaves also make a lovely finishing touch.

Nutmeg

Freshly grated nutmeg adds warmth and a subtle aromatic flavour, giving the cream sauce that familiar, comforting gratin character.

Feta cheese

Adds small pockets of tangy, salty creaminess between the vegetable layers, balancing their natural sweetness.

Parmesan

The final touch! A little freshly grated Parmesan develops a delicious golden topping during the last few minutes of cooking.

Salt and black pepper

Simple but essential seasonings that bring all the flavours together. Remember that feta and Parmesan are already salty, so season accordingly.

How to Make 10-Minute Butternut Squash & Purple Sweet Potato Gratin

Preparing the Vegetable Ribbons

First, peel the butternut squash and purple sweet potato. Cut the butternut squash in half lengthways and scoop out the seeds. Now, using a wide vegetable peeler or mandoline, slice both vegetables lengthways into long, very thin ribbons, ideally around 1–2 mm thick. Try to keep them as long as possible, as longer ribbons are much easier to arrange into the flower shape. Don’t worry if some break or turn out uneven. We’ll use those for the bottom layer, so absolutely nothing goes to waste!

Making the Creamy Garlic and Thyme Sauce

We’re making two individual 14 cm (5½-inch) gratins, so we’ll prepare them one at a time. Take your first microwave- and oven-safe baking dish and pour in half the cooking cream. Add one grated garlic clove, half the fresh thyme leaves, half the freshly grated nutmeg, and a little salt and black pepper. Give everything a good mix until the seasonings are evenly combined.

Now, here’s a little trick: scoop out half of this seasoned cream mixture into a measuring jug or small bowl and set it aside. We’ll pour it over the finished flower later, making sure all those lovely vegetable layers get coated in the sauce.

Building the Bottom Layer

Remember those shorter or less attractive vegetable ribbons? This is where we’re going to use them! Add some to the baking dish with the remaining seasoned cream and gently toss everything together until the ribbons are nicely coated. Arrange them evenly to fill approximately half the depth of the dish, creating a soft, creamy base for our gratin. Sprinkle 1 tablespoon of crumbled feta over the top. The feta adds a lovely salty contrast to the natural sweetness of the vegetables, so don’t skip it!

Creating the Beautiful Flower Shape

Now for the fun part, and trust me, it’s much easier than it looks! Take one long ribbon of butternut squash and one of purple sweet potato, lay them on top of each other and roll them together into a small spiral. Place this little roll upright in the centre of your baking dish.

Next, start arranging more ribbons around it, alternating between butternut squash and purple sweet potato. Keep working your way outwards until the entire surface is covered and you’ve created a gorgeous orange and purple flower. Don’t worry about making every layer perfect. The slightly uneven ribbons actually give the flower a more natural look.

Scatter another 2 tablespoons of crumbled feta over the top, tucking some between the layers. Finally, pour over the reserved seasoned cream and gently spread it across the surface with a spatula, making sure it reaches between the ribbons.

Cooking the Gratin in the Microwave

Once your flower is ready, cover the baking dish with its microwave-safe lid. If your lid has a ventilation knob, make sure to open it so the steam can escape.

Opening the lid’s steam vent before microwaving the gratin.

Microwave on medium-high power for approximately 7–8 minutes, or until the vegetables are completely tender when pierced with a knife. Cooking times can vary slightly depending on your microwave and how thinly you’ve sliced the vegetables, so check them before moving on. If they’re still a little firm, give them another minute. Carefully remove the lid, watching out for the hot steam. You might notice that some of the cream has risen to the surface during cooking. That’s completely normal! Just use a spatula to gently redistribute it over the vegetable layers.

Adding the Golden Parmesan Topping

Now we’re almost there! Sprinkle a little freshly grated Parmesan over the top and transfer the uncovered baking dish to your air fryer. Cook at 180°C (350°F) for approximately 5 minutes, or until the cheese is lightly golden and the cream is bubbling. If you prefer to use the oven, preheat it to 200°C (400°F) fan and bake the gratin, uncovered, for approximately 5–7 minutes. Keep an eye on it during the last few minutes, as the Parmesan can brown quite quickly. Remember, the vegetables are already cooked through, so we’re only giving the top that lovely golden finish.

Making the Second Gratin or One Larger Dish

Repeat the same process with the remaining ingredients to make your second 14 cm (5½-inch) gratin. Alternatively, use one larger 20 cm (8-inch) round dish and follow the same steps with all the ingredients. Microwave for approximately 10–12 minutes, or until the vegetables are tender, then finish with Parmesan in the air fryer or oven as described above.

Serving and Enjoying

Once your gratin is beautifully golden, remove it from the air fryer or oven and let it stand for a couple of minutes before serving. Finish with a few fresh thyme leaves, and that’s it! You now have a stunning flower-shaped gratin with tender layers of butternut squash and purple sweet potato, creamy garlic and thyme sauce, and little pockets of salty feta. Serve it straight from the baking dish while it’s still lovely and warm. It’s almost too pretty to eat, but I promise, it tastes even better than it looks!

How to Make the Gratin Entirely in the Oven

Don’t have a microwave or simply prefer traditional oven cooking? You can absolutely make this gratin from start to finish in the oven! Preheat your oven to 200°C (400°F) fan and prepare the gratin exactly as described above, using either two 14 cm (5½-inch) baking dishes or one larger 20 cm (8-inch) dish. Cover tightly with aluminium foil to trap the steam and help the vegetables cook evenly without drying out.

For two smaller gratins, bake covered for approximately 45–50 minutes. If you’re making one larger gratin, allow around 55–60 minutes. Before removing the foil completely, carefully check whether the vegetables are tender by inserting a knife between the layers. If they’re still firm, cover and continue baking for another 5–10 minutes. Once tender, remove the foil, sprinkle freshly grated Parmesan over the top and return to the oven, uncovered. Bake for another 8–12 minutes, until the cheese is golden and the cream is bubbling. These times are estimates, so use the tenderness of the vegetables as your guide.

Why We Love 10-Minute Butternut Squash & Purple Sweet Potato Gratin

What makes this recipe particularly special is the contrast between how elaborate it looks and how straightforward the cooking process actually is. The orange and purple ribbons create a stunning natural pattern without needing food colouring or complicated equipment, while the combination of sweet vegetables, fragrant herbs, creamy sauce and tangy feta makes every bite satisfying. I also love that the presentation isn’t just decorative. The thin ribbons allow the cream to settle between the layers, helping the vegetables cook evenly and giving the finished gratin its delicate texture. And of course, there’s the time-saving microwave technique, which makes it possible to enjoy a dish inspired by traditional gratins without spending an hour cooking it. The microwave stage takes just 7–8 minutes, followed by a few minutes to brown the Parmesan, with preparation time counted separately. It’s another example of how versatile purple sweet potatoes can be, something I’ve also explored in my Sweet Potato Quiche Florentine and Spinach & Feta Purple Sweet Potato Buns. Whether you’re drawn to the gorgeous colours, the comforting flavours or the clever cooking shortcut, this is one of those recipes that makes everyday vegetables feel a little more exciting.

Perfect for Any Occasion

This Butternut Squash & Purple Sweet Potato Gratin is just as suitable for a relaxed family dinner as it is for a festive table. The individual gratins make elegant side dishes for a dinner party, while the larger version is ideal for sharing during Sunday lunch, Christmas dinner or a special gathering with friends. The vibrant colours also make it a particularly beautiful autumn or winter recipe, although there’s no reason not to enjoy it throughout the year. Another advantage is that you can assemble the gratin up to 24 hours in advance, keep it covered in the refrigerator and cook it when needed, making entertaining much easier. Leftovers can be refrigerated for 3–4 days and gently reheated in the oven or microwave until piping hot. For an autumn-inspired menu, you could start with my Roasted Squash and Tomato Soup or serve this gratin alongside another seasonal favourite, such as my Baby Potatoes with Whipped Feta. It’s a versatile recipe that brings a little elegance to the table without making cooking unnecessarily complicated.

Instructions

  1. Prepare the vegetables. Using a wide vegetable peeler or mandoline, slice the butternut squash and purple sweet potato lengthways into very thin ribbons. Try to keep the ribbons as long and even as possible, as this will make creating the flower shape easier.
  2. Prepare the creamy base. In a 14 cm (5½-inch) microwave- and oven-safe baking dish, combine half the cooking cream (150 ml), 1 grated garlic clove, half the thyme leaves, half the nutmeg, and salt and black pepper to taste. Mix well, then transfer half of the seasoned cream mixture to a measuring jug or small bowl and set aside. Choose some of the shorter or less attractive butternut squash and sweet potato ribbons and toss them in the cream remaining in the dish until well coated. Arrange them in the dish to form the bottom layer, filling it approximately halfway. Sprinkle about 1 tablespoon of crumbled feta evenly over the top.
  3. Create the flower shape. Take one ribbon of butternut squash and one of purple sweet potato, layer them on top of each other and roll them together into a small spiral. Place the spiral upright in the centre of the dish. Continue arranging more ribbons around it, alternating between butternut squash and sweet potato, until the entire surface is covered and you've created a beautiful orange and purple flower. Scatter two tablespoon of crumbled feta over the top, tucking some between the layers. Pour over the reserved seasoned cream and use a spatula to gently spread it evenly across the surface.
  4. Cook and finish. Cover the dish with a microwave-safe lid, opening the ventilation knob if it has one. Microwave on medium-high power for approximately 7–8 minutes, or until the vegetables are tender. Carefully remove the lid and use a spatula to gently redistribute any cream that has risen to the surface during cooking. Sprinkle with freshly grated Parmesan, then transfer the uncovered dish to the air fryer at 180°C (350°F) for approximately 5 minutes, until the top is lightly golden. Alternatively, finish in a preheated oven at 200°C (400°F) fan for approximately 5–7 minutes, or until golden and bubbling. Repeat the process with the remaining ingredients to make the second gratin.
  5. Finish with a few fresh thyme leaves and enjoy a beautifully creamy, tender gratin that's almost too pretty to eat!
  6. Oven-Only Method (Without a Microwave): Preheat the oven to 200°C (400°F) fan. Prepare and assemble the gratin as instructed above, using either two 14 cm (5½-inch) oven-safe baking dishes or one larger 20 cm (8-inch) round dish. Cover tightly with aluminium foil and bake for approximately 45–55 minutes, or until the vegetables are tender when pierced with a knife. Carefully remove the foil, sprinkle freshly grated Parmesan over the top and return to the oven, uncovered, for another 10–15 minutes, until golden and bubbling. Finish with fresh thyme leaves and serve warm.

Note

  • Choosing the Right Baking Dish: This recipe makes two 14 cm (5½-inch) round gratins or one larger 20 cm (8-inch) gratin. Choose dishes that are deep enough to hold the vegetable layers and creamy sauce without overflowing. If using the microwave method, make sure your dishes are both microwave-safe and suitable for the air fryer or oven. For the oven-only method, any appropriately sized oven-safe baking dish will work.
  • Making One Large Gratin Instead of Two: To make one larger gratin, use a 20 cm (8-inch) round baking dish and combine all the ingredients in the same way. Arrange the vegetable ribbons into one large flower, starting from the centre and working outwards. If using the microwave method, cook for approximately 10–12 minutes on medium-high power, checking that the vegetables are tender before finishing in the oven. A 20 cm dish may be too large for some basket-style air fryers, so check that it fits before choosing this method.
  • Oven-Only Method (Without a Microwave): Preheat the oven to 200°C (400°F) fan. Prepare and assemble the gratin as instructed, using either two 14 cm (5½-inch) oven-safe dishes or one 20 cm (8-inch) dish. Cover tightly with aluminium foil and bake until the vegetables are tender when pierced with a knife. Carefully remove the foil, sprinkle with freshly grated Parmesan and return to the oven, uncovered, until the top is golden and bubbling.
  • Microwave Cooking Tips: Microwave power varies between appliances, so use the cooking time as a guide. The vegetables should be completely tender before you transfer the gratin to the air fryer or oven. If they're still firm after 7–8 minutes, continue microwaving in 1-minute intervals. Always use a microwave-safe lid with its steam vent open, or a suitable vented microwave cover. Never use aluminium foil or metal lids in the microwave.
  • Finishing in the Air Fryer or Oven: Once the vegetables are cooked through, sprinkle the gratin with freshly grated Parmesan. Finish in the air fryer at 180°C (350°F) for approximately 5 minutes, or in a preheated oven at 200°C (400°F) fan for approximately 5–7 minutes. The aim is to lightly brown the cheese and create a beautiful golden topping without drying out the vegetables. Keep an eye on the gratin during the final few minutes, as Parmesan can brown quickly.
  • Getting Perfectly Thin Vegetable Ribbons: Use a wide vegetable peeler or mandoline to slice the butternut squash and purple sweet potato into thin, flexible ribbons, ideally around 1–2 mm thick. The thinner the ribbons, the easier they will be to roll and the more evenly they will cook. Try to keep them as long as possible. A mandoline gives the most consistent results, but a sharp vegetable peeler works well too. Use a hand guard when working with a mandoline.
  • Creating the Flower-Shaped Design: Save the longest and widest vegetable ribbons for the decorative top layer. Use the shorter, broken or uneven pieces to create the base of the gratin. Start with a small spiral in the centre, then arrange more ribbons around it, alternating between orange butternut squash and purple sweet potato. Don't worry if the ribbons aren't perfectly even. The overlapping layers create a beautiful flower effect, and slightly irregular shapes make it look more natural.
  • Seasoning and Cheese Variations: Fresh thyme, garlic and nutmeg complement the natural sweetness of the butternut squash and purple sweet potato. If you prefer a milder nutmeg flavour, reduce the quantity slightly. Feta adds a lovely salty contrast. You can also experiment with goat's cheese or Gruyère instead of feta, although the flavour and texture will be different. For a strictly vegetarian version, choose a vegetarian-friendly Parmesan-style hard cheese, as traditional Parmesan contains animal rennet.
  • Can I Prepare This Gratin in Advance?: Yes! You can assemble the gratin up to 24 hours in advance. Prepare the vegetables, creamy sauce and flower-shaped arrangement as instructed, but leave out the Parmesan topping. Cover tightly and refrigerate until ready to cook. The vegetables may release a little moisture and the purple sweet potato may colour some of the cream, but this won't affect the flavour. Cook using your preferred method, allowing a little extra time if the ingredients are chilled. If using a glass or ceramic dish, follow the manufacturer's guidance on temperature changes to avoid thermal shock.
  • How to Store Leftovers: Allow the cooked gratin to cool slightly, then transfer it to an airtight container or cover the baking dish tightly. Refrigerate within 2 hours of cooking and store for up to 3–4 days. The vegetables will soften a little more during storage, and some of the cream may be absorbed into the layers, but the gratin will still taste delicious. Keep it refrigerated rather than leaving it at room temperature.
  • Can I Freeze This Gratin?: Yes, although freezing is not ideal if you want to preserve the delicate texture and decorative appearance. Cream-based sauces can sometimes separate after freezing, and the vegetables may become softer and release extra moisture once thawed. For the best results, freeze the gratin after cooking rather than freezing it raw. Let it cool, wrap tightly or transfer to a freezer-safe container, and freeze promptly for up to 2 months for the best quality. Thaw overnight in the refrigerator before reheating.
  • How to Reheat: For the best results, reheat the gratin in an oven-safe dish, covered with foil, at 180°C (350°F) fan for approximately 15–25 minutes, or until heated through. A larger or deeper gratin may take longer. Remove the foil for the final few minutes if you want to refresh the golden topping. Alternatively, microwave individual portions in short intervals until piping hot throughout. If the sauce has thickened during storage, add a small splash of cream before reheating.
  • Serving Suggestions: This gratin makes a beautiful side dish for roasted chicken, beef, fish or a festive dinner. It's also delicious served with a crisp green salad for a lighter meal. The full recipe serves approximately 4 people as a side dish or 2 people as a more generous main course. For the best presentation, serve it directly from the baking dish while the top is golden and the creamy sauce is still warm.
