320g of puff pastry (ready rolled sheet)
3tbsp of sun-dried tomato pesto
100g mozzarella cheese (shredded)
1 courgette (or 1/2 courgette and 1/2 yellow squash)
2tbsp olive oil (divided)
1tsp Mediterranean spice mix
Sesame seeds (for garnish)
Thyme leaves (for garnish)
