Instructions

  1. Preheat the oven to 200°C (fan).
  2. Trim the edges of the courgettes and use a vegetable peeler to slice them into long strips. Continue until you reach the seeds, then flip over and repeat. Pat the strips dry very well.
  3. On a baking tray lined with parchment paper, assemble the courgette strips in a "basket" pattern.
  4. Mix the egg yolk with the milk and brush it over the top of the courgette strips. Then, sprinkle with the grated Parmesan cheese.
  5. Bake for 20-25 minutes, or until golden.
  6. When ready, let it cool, then flip it upside down onto cling film and remove the parchment paper.
  7. Spread the cream cheese over the cooled base, then sprinkle with salt and pepper.
  8. Place the salmon slices on top of the cream cheese, leaving a few centimetres free on one of the long edge.
  9. Add avocado slices and sprinkle with lemon juice.
  10. Add chilli flakes if desired, then roll tightly from the opposite side of the free edge.
  11. Wrap the roll in cling film and place it in the fridge for 1 hour to firm up.
  12. Remove the cling film and slice the roll before serving.
  13. Serve with soy sauce and enjoy!
