How to Make Date and Gorgonzola Puffs

Prepare the Dates: Start by pitting the dates and stuffing them with a teaspoon of Gorgonzola cheese and crushed pecans. This simple yet effective combination brings all the flavours together.

Ingredients
    For the Puffs:
  • 6 dates (pitted)
  • 6 tsp Gorgonzola cheese
  • 6 tsp crushed pecans
  • 320 g puff pastry (1 ready-rolled sheet)
  • 1 egg yolk (for egg wash)
  • 1 tbsp milk (for egg wash)
  • For Garnish:
  • Crushed pecans
  • Fresh thyme leaves
  • Honey
Instructions
  1. Preheat your oven to 200°C (fan).
  2. Stuff each date with 1 tsp of Gorgonzola cheese and 1 tsp of crushed pecans.
  3. Unroll the puff pastry and cut it into 12 equal squares, approximately 8cm x 8cm. Using a 5cm cookie cutter, cut out the centres of 6 squares. Place one square with a cut-out centre on top of a full square to create a layered frame. Repeat with the remaining pastry squares. Arrange them on a baking tray lined with parchment paper.

  4. Whisk together the egg yolk and milk to make an egg wash and brush it over the pastry.
  5. Place a stuffed date in the centre of each square, sprinkle with additional crushed pecans, and bake for about 15 minutes, or until the pastry is golden and puffed. Once baked, drizzle with honey, garnish with fresh thyme leaves, and serve warm.
