Stuff each date with 1 tsp of Gorgonzola cheese and 1 tsp of crushed pecans.

Unroll the puff pastry and cut it into 12 equal squares, approximately 8cm x 8cm. Using a 5cm cookie cutter, cut out the centres of 6 squares. Place one square with a cut-out centre on top of a full square to create a layered frame. Repeat with the remaining pastry squares. Arrange them on a baking tray lined with parchment paper.

Whisk together the egg yolk and milk to make an egg wash and brush it over the pastry.
