Instructions

  1. Marinate the Chicken Wings:

In a bowl, combine chicken wings with dark soy sauce, sesame oil, baking soda, and light soy sauce. Mix well, cover, and refrigerate for at least 30 minutes.

Marinating Time: For the best flavour, marinate the chicken wings for at least 30 minutes, but if you have more time, let them marinate for up to 4 hours in the refrigerator. This allows the flavours to fully penetrate the meat.
  2.  Prepare the Oven:

Preheat your oven to 200°C (fan-assisted).

  3. Prepare the Wings for Baking:

Grease a roasting rack with vegetable oil. Arrange the chicken wings on the rack, spaced apart. Bake for 30-35 minutes, turning them halfway through, until golden and crisp.

  4. Make the Hoisin Sauce:

In a frying pan over medium heat, heat the vegetable oil. Add minced garlic and sauté for 2 minutes, stirring frequently to prevent burning. Stir in the light soy sauce, lemon juice, and hoisin sauce. Cook until the sauce thickens slightly.

  5. Coat the Wings:

Remove the wings from the oven and toss them in the hoisin sauce until evenly coated.

  6. Serve:

Plate the wings and sprinkle with sesame seeds and chopped coriander. Enjoy!

Serving Suggestion: These wings pair perfectly with a side of steamed rice or fresh veggies, making for a more complete meal. They’re also great served with a dipping sauce like a tangy lime aioli or extra hoisin on the side.

Note

  • 1.Marinating Time: For the best flavour, marinate the chicken wings for at least 30 minutes, but if you have more time, let them marinate for up to 4 hours in the refrigerator. This allows the flavours to fully penetrate the meat.

2.Crispiness Tip: The baking soda in the marinade helps to break down proteins and draw out moisture, resulting in crispier wings. Make sure to spread the wings out evenly on the roasting rack to ensure they cook evenly and get nice and crispy.

3.Hoisin Sauce: If you prefer a sweeter glaze, you can add a tablespoon of honey or brown sugar to the hoisin sauce. For a spicier kick, mix in some chilli flakes or sriracha.

4.Serving Suggestion: These wings pair perfectly with a side of steamed rice or fresh veggies, making for a more complete meal. They’re also great served with a dipping sauce like a tangy lime aioli or extra hoisin on the side.

5.Storage and Reheating: Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 180°C (350°F) for about 10-12 minutes to maintain crispiness.

6.Dietary Modifications: To make this recipe gluten-free, ensure you use gluten-free soy sauce and hoisin sauce.
