  2. Meanwhile, preheat your oven to 200°C (fan). Thinly slice both the potatoes and sweet potatoes, then rinse the regular potatoes in ice-cold water to remove excess starch and pat dry.
  3. Grease a 20cm x 20cm baking dish. Take about 20-25 slices of sweet potato and 20-25 slices of regular potato, and arrange them vertically in the dish, placing them one after another in an alternating pattern.
  4. Discard the shallot and rosemary from the infused cream mixture, then pour the cream evenly over the arranged potatoes. Cover the dish with aluminium foil and bake for 1 hour, or until the potatoes are soft and tender.
