Preheat the oven to 200°C (fan).

Trim the edges of the courgettes and use a vegetable peeler to slice them into long strips. Continue until you reach the seeds, then flip over and repeat. Pat the strips dry very well.

On a baking tray lined with parchment paper, assemble the courgette strips in a "basket" pattern.

Mix the egg yolk with the milk and brush it over the top of the courgette strips. Then, sprinkle with the grated Parmesan cheese.

Bake for 20-25 minutes, or until golden.

When ready, let it cool, then flip it upside down onto cling film and remove the parchment paper.
