Making the Salmon Filling
Using a sharp knife, finely chop the fresh skinless, boneless salmon into very small pieces, almost like a rough mince. Transfer the salmon to a bowl, then add mayonnaise, sriracha, lime juice, soy sauce and chopped chives. Mix everything together until creamy and evenly combined. Preparing the Rice Paper
Place the sesame seeds onto a flat plate. Next, pour water into a shallow plate or dish slightly larger than your rice paper sheets. Briefly dip one rice paper sheet into the water. Do not wait until it becomes fully softened, as it will continue to soften while you assemble the parcel. Transfer it onto a clean flat work surface, then place one square nori sheet on top.

Filling and Folding the Parcels
Visually divide the nori sheet into four sections. Spread some sushi rice evenly over the first section, spoon some salmon filling onto the second, and arrange sliced cherry tomatoes over the third, leaving the fourth section empty. Using a sharp knife, make one cut from the centre down between the tomato section and the empty section.

Since the rice paper sheet is round and the nori sheet is square, one corner will be slightly less filled and less sturdy than the rest of the parcel. Tuck this corner underneath to help seal everything together.

Dip one side of the parcel into the sesame seeds, pressing gently so the surface is fully coated, then transfer it to an air fryer basket lightly sprayed with olive oil.

Repeat the process with the remaining ingredients to create 2 more parcels, giving you 3 parcels in total. Lightly spray the tops with olive oil, then air fry at 200°C/400°F for about 15 minutes, or until golden and cooked through.
