Pour the mixture into a sieve lined with muslin or cheesecloth, rinse the curds with cold water to cool them down and remove any lemony taste,

  1. Pour the milk into a saucepan and gently heat until it’s just about to boil — don’t let it bubble over. Stir in the lemon juice and mix gently until the curds separate from the whey. If needed, add a little more lemon juice to help it along. Line a sieve with muslin or cheesecloth and place it over a large bowl. Pour in the curdled mixture and let the liquid drain away. Rinse the curds with ice-cold water to cool and remove any lemony taste. Gather the cheesecloth and twist to form a bundle. Hang it over a bowl or the sink for at least 1 hour to drain completely, or refrigerate overnight for best results. You should be left with around 200 g of crumbly, fresh cottage cheese. If using ready-made cottage cheese, simply drain it well before starting.
  2. Pit the dates and add them to a food processor. Blend until smooth and sticky. Add the cottage cheese, date paste, vanilla powder, and 2 tablespoons of desiccated coconut to a bowl. Knead the mixture together with your hands until fully combined and cohesive. Take a small amount of the mixture, flatten it gently in your palm, and place a blueberry in the centre. Fold the edges around the fruit to seal, then roll into a smooth ball. Roll the balls in extra desiccated coconut to coat. You should get around 14–16 bites.
  3. Store in the fridge in an airtight container for up to 3 days
