These Blueberry Cottage Cheese Chocolate Spheres turn a handful of familiar ingredients into an elegant individual dessert.   • Blueberries – Fresh or frozen blueberries can be used to prepare the centre. They cook down into a vibrant sauce with a naturally sweet yet slightly tangy flavour.
  • Cornflour, honey and water – Cornflour thickens the blueberries into a stable filling that remains contained inside the spheres, while honey provides a softer sweetness than granulated sugar.
  • Cottage cheese and yogurt – These create the creamy body of the spheres and contribute a useful amount of protein without requiring protein powder.
  • Lemon zest and vanilla – Lemon zest lifts the blueberry flavour and balances the richness of the chocolate, while vanilla rounds out the cottage cheese mixture.

How to Make Blueberry Cottage Cheese Chocolate Spheres

Although these spheres require several freezing stages, the hands-on preparation is straightforward. Preparing each component separately helps the blueberry centre stay distinct, keeps the cottage cheese mixture smooth and allows the chocolate coating to set neatly around each sphere.

Prepare the Blueberry Filling

Prepare the blueberry filling first, as it needs time to cool completely before assembling the spheres. Add the blueberries, cornflour and honey to a saucepan and mix thoroughly until evenly combined. Pour in the water and stir again, making sure there are no visible lumps of cornflour. Place the saucepan over medium-low heat and cook, stirring constantly. Once the mixture begins to boil, continue cooking for 2 to 3 minutes, or until the blueberries have softened and a smooth, thick sauce has formed.

Pass the blueberry sauce through a fine-mesh sieve for a smoother consistency, pressing it through with the back of a spoon or spatula. Transfer the strained sauce to a bowl and leave it to cool completely to room temperature before placing it in the fridge to chill. Cover the surface directly with cling film to prevent a skin from forming. The blueberry filling can be prepared one day in advance and kept refrigerated until needed.

Blend the Cottage Cheese Mixture

Add the cottage cheese, yogurt, honey, finely grated lemon zest and vanilla to a food processor. Blend until the mixture is completely smooth and creamy, stopping to scrape down the sides of the bowl if necessary. Make sure no visible cottage cheese curds remain, as thorough blending will give the spheres the smoothest possible texture. An immersion blender can also be used instead of a food processor. Place the ingredients in a tall, deep container and blend until smooth, which will also help to reduce splashing.

Fill the Silicone Mould

Spoon the cottage cheese mixture into the cavities of a silicone sphere mould, spreading it across the bottoms and up the sides. Do not fill the cavities completely at this stage, as you need to leave enough space in the centre for the blueberry filling.

Spoon some of the chilled blueberry sauce into each cavity, leaving a clear border around the edges so you can seal it completely with the remaining cottage cheese mixture.Place the partially filled mould in the freezer for approximately 2 hours. This first freezing stage firms the blueberry filling and makes it easier to cover with the remaining cottage cheese mixture without the two layers mixing together. The centres do not need to be completely solid at this point, but they should be firm enough to hold their shape when covered.

Complete and Freeze the Spheres

Once the blueberry centres have firmed up, cover each one completely with the remaining cottage cheese mixture. Smooth the surface so the filling is fully enclosed.

Place one oat cookie over each mould cavity and press it down gently. Choose cookies that fit neatly over the cavities, trimming them slightly if necessary. The cookies create a stable base for the spheres and add a contrasting texture. Carefully insert one toothpick through each cookie and into the cottage cheese mixture. The toothpicks will act as handles when dipping the spheres into the chocolate, so make sure they are inserted securely. Return the mould to the freezer for another 3 to 4 hours, or until the spheres are completely solid. Freeze the spheres until completely solid before coating them. If they remain too soft, they may lose their shape or pull away from the cookie bases.

Prepare the Chocolate Coating

When the spheres are completely frozen, break the milk chocolate into small chunks and melt it using either the microwave or a double boiler. For the microwave method, place the chocolate in a microwave-safe bowl and heat it in short 10-second bursts, stirring thoroughly after each interval until fully melted. Heating it gradually helps prevent the chocolate from scorching. For the double-boiler method, place the chocolate in a heatproof bowl set over a saucepan of gently simmering water. Make sure the bottom of the bowl does not touch the water, as direct heat may cause the chocolate to overheat. Stir gently until completely melted, then remove the bowl from the heat.

Add the neutral oil and stir until the chocolate is smooth, fluid and glossy. Sunflower oil works particularly well, while light olive oil can also be used as long as it does not have a strong flavour. Leave the chocolate to cool for 10 to 15 minutes so it thickens slightly. It should still be fluid enough for dipping but should not be extremely warm or watery, as hot chocolate may begin to soften the frozen filling. Transfer the chocolate to a small, deep bowl that is slightly wider in diameter than the cottage cheese spheres. A narrow bowl creates enough depth for dipping without requiring an excessive amount of chocolate.

Coat the Spheres

Set a wire cooling rack securely over two cups or small bowls, leaving enough open space underneath for the toothpicks to hang freely. Make sure the setup is stable and compact enough to fit inside your fridge once all the spheres have been coated. Work with one fully frozen sphere at a time so the remaining desserts stay as cold as possible. Carefully remove one sphere from the silicone mould,

hold it securely by the toothpick and lower it into the melted chocolate until completely coated. Lift the sphere slowly and allow the excess chocolate to drip back into the bowl. If necessary, gently rotate it by the toothpick so the coating settles evenly around the entire surface.

Carefully guide the toothpick down through one of the openings in the wire cooling rack. Position the sphere so it rests upright on top of the rack while the toothpick hangs freely underneath. Repeat with the remaining spheres, continuing to work one at a time. If the chocolate becomes too thick while you work, warm it very briefly and stir well before continuing.

Chill and Remove the Toothpicks

Once all the spheres have been coated, carefully transfer the entire rack, cups and toothpicks setup to the fridge. Leave the spheres there until the centres have softened slightly.Let the spheres soften slightly in the fridge before removing the toothpicks. Pulling them out while the filling remains completely frozen may crack the chocolate shell or detach the cookie base.Once the toothpicks feel slightly looser, gently twist each one before slowly pulling it out. Twisting helps release the toothpick cleanly without disturbing the surrounding chocolate or cottage cheese filling.

Continue chilling the spheres until they reach the desired serving texture. They should remain cold and firm enough to hold their shape, while the centre should feel creamy rather than completely frozen.

  2. Add the cottage cheese, yogurt, honey, lemon zest and vanilla to a food processor and blend until completely smooth. Alternatively, use an immersion blender. Spoon the cottage cheese mixture into the cavities of a silicone sphere mould, covering the bottoms and sides while leaving space in the centre for the blueberry filling. Add some of the chilled blueberry sauce to each cavity, then freeze for approximately 2 hours so the filling firms up and is easier to cover. Once frozen, cover the blueberry centres with the remaining cottage cheese mixture. Place one oat cookie over each cavity and press it down gently, then carefully insert a toothpick through each cookie and into the sphere to use as a handle when dipping. Freeze for another 3 to 4 hours, or until completely solid.
  3. When ready to coat the spheres, break the chocolate into small pieces and melt it in the microwave or over a double boiler. For the microwave method, heat it in short 10-second bursts, stirring thoroughly after each one, until melted. For the double-boiler method, place the chocolate in a heatproof bowl over a saucepan of gently simmering water, making sure the bowl does not touch the water, and stir until melted. Add the oil and mix until smooth and glossy, then leave the chocolate to cool for 10 to 15 minutes so it thickens slightly. Transfer it to a small, deep bowl that is slightly wider than the cottage cheese spheres.
  4. Set a wire cooling rack over two cups or small bowls, leaving enough space underneath for the toothpicks to hang freely. Working with one fully frozen sphere at a time, remove it from the mould, hold it by the toothpick and dip it into the melted chocolate until completely coated. Allow the excess chocolate to drip off, then guide the toothpick down through one of the openings in the rack so the sphere rests upright on top and the toothpick hangs underneath. Repeat with the remaining spheres, then transfer the entire setup to the fridge. Once the spheres have softened slightly, gently twist and pull out the toothpicks.
