Simple Ingredients, Big Flavours
What makes these rice paper rolls so special is how a handful of simple ingredients come together to create something truly delicious:
Rice paper sheets – Light, naturally gluten-free and perfect for crisping up beautifully, just like in Air-Fried Rice Paper Parcels
Feta cheese – Salty, creamy and rich, bringing depth and bold flavour to the filling
Spinach – Adds freshness, colour and a subtle earthiness that balances the feta
Eggs – Help bind the filling and create that golden, crispy coating
Garlic granules and black pepper – Simple seasonings that enhance the savoury profile
Olive oil – Helps achieve that crisp texture without deep frying
Sesame seeds – Add a light crunch and nutty finish
Start by preparing the filling. Place the spinach in a heatproof bowl and pour over boiling water. Let it sit for 30 seconds, then drain and rinse under cold water to stop the cooking. Squeeze out as much excess moisture as possible using your hands, then chop finely. This step is essential, as excess moisture will prevent the rolls from crisping properly.

In a bowl, combine the feta, spinach, egg, garlic granules, black pepper and olive oil. Mix until well combined. The mixture should be slightly firm but easy to shape.

Shaping the Rolls
In a shallow bowl, whisk together the eggs and milk until smooth. Working with one rice paper sheet at a time, dip it briefly into the egg mixture, just enough to coat it.
Lightly coating the rice paper in egg mixture
Place it on a flat surface and leave for 20 to 30 seconds until softened and pliable. Add a portion of the filling near the bottom edge and shape it into a long, thin line across most of the width of the rice paper, leaving a small gap at the sides.

Roll it tightly into a compact roll without folding the sides,

then gently coil it into a spiral. Sprinkle with sesame seeds and repeat with the remaining ingredients.

Air Frying to Crispy Perfection
Lightly spray the air fryer basket with oil and arrange the rolls in a single layer.

Spray the tops of the rolls as well. Air fry at 200°C/400°F for 13 to 15 minutes, or until golden and crisp. For more even crisping, turn them halfway through cooking. Serve immediately while crisp with garlic yoghurt or your favourite dip.

The filling is packed with flavour from salty feta, tender spinach and a hint of garlic. Shaped into spiral rolls, they look as good as they taste and are perfect as a snack, appetiser or light meal. Instructions
1
Start by preparing the filling. Place the spinach in a heatproof bowl and pour over boiling water. Let it sit for 30 seconds, then drain and rinse under cold water to stop the cooking. Squeeze out as much excess moisture as possible using your hands, then chop finely. This step is essential, as excess moisture will prevent the rolls from crisping properly. In a shallow bowl, whisk together the eggs and milk until smooth. Working with one rice paper sheet at a time, dip it briefly into the egg mixture, just enough to coat it. Place it on a flat surface and leave for 20 to 30 seconds until softened and pliable. Add a portion of the filling near the bottom edge and shape it into a long, thin log across most of the width of the rice paper, leaving a small gap at the sides. Roll it tightly into a compact roll without folding the sides, then gently coil it into a spiral. Sprinkle with sesame seeds and repeat with the remaining ingredients.

Make sure the spinach is very well drained. Any excess moisture will make the rolls soft instead of crispy. Squeeze it thoroughly with your hands before chopping.
Do not soak the rice paper for too long. A quick dip in the egg mixture is enough. It will continue to soften as it rests. Over-soaking will make it tear and harder to roll.
Shape the filling into a long, thin line across the rice paper, leaving a small gap at the edges. This helps prevent the filling from spilling out as you roll.
These are best enjoyed fresh while crispy. If they soften, you can easily reheat them in the air fryer at 180°C/375°F for 2 to 3 minutes to bring back the crunch.
You can prepare the rolls in advance and keep them covered in the fridge for a few hours before cooking. Lightly spray with oil just before air frying.
For extra crispiness, turn the rolls halfway through cooking and make sure they are not overcrowded in the basket.
Oven method: Arrange the rolls on a lined baking tray, spray lightly with oil and bake at 200°C/400°F (fan) for 18 to 22 minutes, turning halfway through, until golden and crisp. They may be slightly less crispy than in the air fryer but still delicious.
Serve with garlic yoghurt, tzatziki, sweet chilli sauce or a spicy mayo for dipping.
