High-Protein Spinach Sandwich: Fresh, Filling and Packed with Protein
If you thought a sandwich needed bread to be satisfying, this High-Protein Spinach Sandwich is ready to prove otherwise. Instead of traditional bread, the sandwich is built with soft, flexible spinach and egg “bread”, then generously layered with juicy shredded chicken breast, fresh tomato, avocado, crisp salad leaves and a creamy avocado yogurt sauce. With around 50 g of protein in one sandwich, it makes a seriously satisfying lunch while staying naturally flourless, grain-free, gluten-free and low in carbs. Simple Ingredients, Big Flavours
There is nothing complicated hiding in this recipe. A handful of everyday ingredients come together to create plenty of texture, freshness and flavour, while chicken breast, eggs and high-protein yogurt give the sandwich its impressive protein content. It follows the same idea as my High-Protein Tuna Cucumber Roll and High-Protein Salmon Courgette Wrap (No Bread!): take a familiar lunch format, replace the usual bread or wrap with something lighter, and make the filling satisfying enough that you absolutely do not miss it.
- Fresh spinach – The star of the homemade spinach bread. Once blended with the eggs, it creates that beautiful green colour without the need for flour or traditional bread.
- Eggs – They bind the spinach mixture and give the bread enough structure to lift, stack and hold all those generous sandwich fillings.
- Chicken breast – Cooked and shredded chicken breast provides the main protein boost while keeping the filling tender and easy to layer.
- Avocado – Used both in the creamy yogurt sauce and sliced inside the sandwich, avocado adds richness and a buttery texture that balances the fresh vegetables.
- High-protein yogurt – Blended with avocado, lemon and salt, it creates a smooth and creamy spread while contributing extra protein.
- Lemon juice – A small amount brings freshness and acidity to the avocado yogurt cream and prevents the sauce from tasting too rich.
- Tomato and salad leaves – These bring juiciness, crunch and freshness between the softer layers of spinach bread, avocado and chicken.
- Olive oil spray and salt – Just enough to help the spinach bread cook neatly in the sandwich maker and bring out the flavour of the simple ingredients.
How to Make High-Protein Spinach Sandwich
Make the Spinach Bread
Add the fresh spinach leaves, eggs and a pinch of salt to a food processor and blend until completely smooth. You can also use an immersion blender if you prefer.

Preheat your sandwich maker and lightly spray the cooking plates with olive oil spray. Pour half of the spinach mixture into the sandwich maker, close the lid and cook for about 2 minutes, or until the spinach bread is fully set and cooked through. Carefully remove it and repeat with the remaining spinach mixture to make the second piece. Set both pieces of spinach bread aside while you prepare the filling.

Make the Avocado Yogurt Cream
Add half an avocado, the high-protein yogurt, lemon juice and a pinch of salt to a food processor. Blend until smooth and creamy, scraping down the sides if needed to make sure everything is evenly combined.
Assemble the Sandwich
Place one piece of spinach bread in the centre of a large sheet of parchment paper. Make sure the parchment is large enough to wrap completely around the finished sandwich, as this will help keep all of the generous layers together. Spread half of the avocado yogurt cream over the spinach bread. Top with 2 salad leaves, followed by the tomato slices, thinly sliced avocado and shredded cooked chicken breast. Add the remaining 2 salad leaves, then spoon the rest of the avocado yogurt cream over the top. Place the second piece of spinach bread on top to close the sandwich.

Wrap and Slice
Wrap the sandwich tightly in the parchment paper, folding the paper securely around the sides so the filling stays in place and the sandwich is easier to hold.

Using a sharp knife, slice the wrapped sandwich in half through the parchment paper. Serve straight away and enjoy.
