130g skinless, boneless salmon, finely chopped
3 spring onions (finely sliced)
10 rice papers (quartered)
Vegetable oil (for frying)
Salt and pepper (to taste)

Use scissors to cut each rice paper into quarters, then briefly dip them in a shallow plate of water until just softened.

Place two softened pieces on a flat surface, add a small amount of salmon filling to the centre, flatten slightly, and sprinkle with spring onions. Cover with two more pieces of rice paper and press the edges to seal. Repeat with the remaining ingredients.
