How to Make Cheesy Beef Filo Swirls
Preparing the Beef Filling
Start by preparing the beef filling, as it needs to cool before being mixed with the cheese. Heat the olive oil in a large frying pan over medium heat, then add the diced onion. Cook for a few minutes, stirring occasionally, until the onion has softened and turned slightly translucent. Add the minced beef to the pan and season with salt and black pepper. Cook for about 10 minutes, breaking up any larger pieces with a wooden spoon as it browns. The beef should be fully cooked through with no pink remaining. Once ready, remove the pan from the heat and leave the mixture to cool to room temperature. When the beef has cooled, add the grated mozzarella and chopped coriander. Reserve a little coriander for garnish before mixing the rest into the filling. Stir everything together until well combined, then set the filling aside while you prepare the filo.

Preparing the Filo Swirls
Preheat the oven to 190°C/375°F fan and line a baking tray with parchment paper. Place one filo sheet on a clean, flat work surface. Keep the remaining filo sheets covered with a clean, damp towel while you work, as filo pastry dries out quickly once exposed to air. Spread about 1 tablespoon of sun-dried tomato pesto evenly over the filo sheet. Spoon about 3 tablespoons of the beef filling in a line close to one of the longer edges. Roll the filo up into a long roll, keeping the filling tucked inside as neatly as possible.

Coil the roll into a swirl, then tuck the end underneath to help it hold its shape. Place the swirl on the prepared baking tray. Repeat the same process with the remaining filo sheets, pesto and beef filling until all the swirls are assembled.

Finishing and Baking
In a small bowl, whisk together the egg and milk until smooth. Brush the egg wash all over the filo swirls, making sure to coat the tops and sides. Sprinkle with sesame seeds.

Bake for about 20 minutes, or until the filo swirls are golden and cooked through. Remove from the oven and sprinkle with the reserved chopped coriander before serving. These are best served warm, while the mozzarella is still soft and melty.
