    These were so easy to make. I sealed the tortillas with some of the beaten eggs , then placed the tortillas in a lightly sprayed jumbo muffin tin, filled with scrambled eggs, spinach, mushrooms, etc. using what I had on hand. Some were made with some Pizza Sauce, olives, cheese, etc. These were so good and so simple, plus you can use what you have in your refrigerator…bits of this and that. Wow! You have a fan!
