Cheesy Roasted Pepper Flatbreads: Soft, Golden and Bursting with Flavour
There is something incredibly satisfying about making your own stuffed flatbreads, especially when they come straight from the frying pan with a golden crust and a beautifully melted cheese filling. These Cheesy Roasted Pepper Flatbreads combine sweet, slightly smoky roasted red peppers, soft roasted garlic, cheddar, mozzarella and fresh coriander, all wrapped inside a wonderfully tender homemade dough. The final touch is a fragrant paprika oil brushed over the warm bread, bringing everything together. If you love homemade stuffed breads as much as I do, you should also try my Spinach and Feta Flatbreads or these delicious Meat-Stuffed Flatbread (Azerbaijani Qutab). Both are perfect examples of how a simple dough can become something truly special.

Simple Ingredients, Big Flavours
What makes this roasted pepper flatbread recipe so delicious is the combination of fresh ingredients and a few simple cooking techniques. Roasting brings out the natural sweetness of the peppers and transforms the garlic into something wonderfully mellow, while the two cheeses create a rich, savoury filling. The dough itself requires only a handful of pantry staples and a little patience. If you enjoy experimenting with homemade cheese-filled breads, my Four Cheese Pesto Focaccia and Peppery Cheddar Breadsticks are two more recipes worth exploring.
Bread flour
Provides the structure needed for a soft, elastic dough that can be stretched and rolled around the filling without tearing too easily.
Lukewarm water
Helps bring the dough together and creates the right consistency for kneading. Make sure it is warm rather than hot.
Instant yeast and sugar
Work together to help the dough rise, giving the finished flatbreads a soft, light texture.
Salt and olive oil
Salt enhances the flavour of the dough, while olive oil makes it easier to handle and adds a little richness.
Red peppers
Roasting concentrates their natural sweetness and adds a subtle smoky flavour that pairs beautifully with melted cheese.
Whole garlic bulb
Once roasted, garlic becomes soft, sweet and mellow, adding depth to the filling without the sharpness of raw garlic.
Cheddar and mozzarella
Cheddar brings a stronger, savoury cheese flavour, while mozzarella gives the filling its wonderfully soft, stretchy texture.
Fresh coriander
Adds freshness and a fragrant herbal note that balances the richness of the cheeses.
Paprika
Mixed with olive oil and coriander, it creates a simple finishing oil that adds colour and another layer of flavour.
How to Make Cheesy Roasted Pepper Flatbreads
Preparing the Homemade Dough
Start by combining the lukewarm water, sugar and instant yeast in a small bowl or glass. Stir well and leave for 10 minutes to allow the yeast to activate. Meanwhile, sift the bread flour into a large mixing bowl, add the salt and stir to combine. Pour in the yeast mixture and mix with a spoon until a rough dough begins to form. Transfer it to a clean work surface and knead by hand for a few minutes until you have a soft, smooth and elastic dough. Try not to add any extra flour, even if it feels slightly sticky at first, as keeping the dough soft is essential for achieving tender flatbreads. Return it to the mixing bowl, coat with olive oil, cover with cling film or a clean kitchen towel and leave to rise in a warm place for approximately 1 hour, or until doubled in size.

Roasting the Peppers and Garlic
While the dough is rising, prepare the roasted vegetable filling. Place the whole red peppers and garlic bulb, with the top cut off and the cut side facing down, into your air fryer basket. Drizzle with a little olive oil and sprinkle with salt. Air fry at 200°C (400°F) for approximately 25–30 minutes, turning the peppers halfway through, until their skins are slightly charred and the flesh is soft and tender. Once roasted, allow everything to cool slightly until safe to handle. Peel away the skins and remove the seeds from the peppers, then roughly chop the flesh and transfer it to a mixing bowl. Squeeze the softened garlic cloves out of their skins, add the grated cheddar, mozzarella and freshly chopped coriander, and mix until evenly combined. Set the filling aside while you prepare the dough.

Alternatively, you can roast everything in the oven. Preheat to 200°C fan (400°F), arrange the peppers and garlic bulb, cut-side down, on a baking tray, drizzle with a little olive oil, sprinkle with salt and roast for 30–40 minutes, turning the peppers halfway through.
Dividing and Shaping the Dough
Once the dough has doubled in size, gently press it down to release the trapped air and transfer it to a clean, lightly oiled work surface. Knead a few times, then divide into 6 equal portions, approximately 135 g (4¾ oz) each. Shape each portion into a smooth ball, leaving a little space between them, and cover with a clean kitchen towel to prevent the surface from drying out.

then carefully bring the edges of the dough together over the filling, pinching firmly to seal.

Turn the filled dough seam-side down and gently roll it into a flat round approximately 20 cm (8 inches) in diameter. Be careful not to press too hard, as the dough can tear and allow the filling to escape during cooking. Repeat with the remaining dough and filling until you have 6 stuffed flatbreads, keeping them covered with a clean kitchen towel while you finish shaping the rest.

Cooking the Flatbreads in a Frying Pan
Heat a dry frying pan over medium-low heat. There is no need to add any oil, as the flatbreads cook beautifully in a dry pan. Starting with the flatbread you shaped first, carefully place it in the pan, seam-side up, and cook for a few minutes until the underside turns golden brown. Flip it over and continue cooking until the other side is equally golden and the dough is cooked all the way through. Keep an eye on the heat, as you want the dough to cook gently while the cheese melts inside. If the outside starts browning too quickly, simply reduce the temperature slightly. Repeat with the remaining flatbreads, stacking the cooked ones on a plate and covering them with a clean kitchen towel. This helps trap the warmth and moisture, keeping the bread wonderfully soft while you finish cooking the rest.

Adding the Finishing Touch
While the flatbreads are still warm, prepare the fragrant paprika oil. In a small bowl, combine the olive oil, paprika and finely chopped fresh coriander, stirring until everything is well mixed. Brush the mixture generously over the surface of each flatbread, allowing the warm bread to absorb some of the aromatic oil. This simple finishing touch adds a beautiful colour and another layer of flavour, perfectly complementing the sweet roasted peppers, mellow garlic and melted cheese inside.

Description
These Cheesy Roasted Pepper Flatbreads are one of those recipes you'll want to make again and again! The homemade dough is wonderfully soft, with a golden outside and a delicious filling that combines the sweetness of roasted peppers with rich, mellow garlic and two kinds of cheese. Fresh coriander adds a lovely burst of flavour, while a final brush of paprika oil makes them even more irresistible. They're cooked in a frying pan, so there's no need for an oven to make the flatbreads themselves. Perfect for lunch, dinner or sharing with family and friends, they're especially delicious served straight from the pan while the cheese is still melting.
Ingredients
For the dough:
300ml lukewarm water (1¼ cups)
1tsp sugar
1tsp instant yeast
500g bread flour (4 cups + 2½ tbsp)
1tsp salt
1tbsp olive oil (plus extra for greasing the work surface)
For the filling:
2 red peppers
100g cheddar cheese (just under 1 cup, grated)
60g mozzarella (½ cup, grated)
1 whole garlic bulb (top cut off)
1 bunch of fresh coriander (chopped)
For the topping:
1tbsp olive oil
1tsp paprika
1tsp finely chopped fresh coriander
Instructions
1
In a small bowl or glass, combine the lukewarm water, sugar and instant yeast. Stir well and leave for 10 minutes to allow the yeast to activate. Sift the bread flour into a large mixing bowl, add the salt and stir to combine. Pour in the yeast mixture and mix with a spoon until a rough dough forms. Transfer to a clean work surface and knead by hand for a few minutes until soft, smooth and elastic. Avoid adding extra flour, as the dough should remain soft and slightly tacky. Return it to the bowl, coat with 1 tablespoon of olive oil, cover with cling film or a clean kitchen towel and leave to rise in a warm place for approximately 1 hour, or until doubled in size.

Meanwhile, prepare the filling. Place the whole red peppers and garlic bulb, cut-side down, into the air fryer basket. Air fry at 200°C (400°F) for 25–30 minutes, turning the peppers halfway through, until the skins are slightly charred and the flesh is tender. The garlic should also be soft enough to squeeze out of its skin. Alternatively, to roast in the oven, preheat to 200°C fan (400°F). Arrange the peppers and garlic bulb, cut-side down, on a baking tray and roast for 30–40 minutes, turning the peppers halfway through, until softened and lightly charred. Leave to cool slightly until safe to handle. Peel away the skins and remove the seeds from the peppers, then roughly chop the flesh and transfer it to a bowl. Squeeze the softened garlic cloves out of their skins, add the chopped coriander, cheddar and mozzarella, and mix until evenly combined. Set aside.

Knead a few times, then divide into 6 equal portions, approximately 135 g (4¾ oz) each. Shape each portion into a smooth ball, space them slightly apart and cover with a clean kitchen towel to prevent them from drying out.

Working with one dough ball at a time, flatten it into a round using your hands or a rolling pin. Spoon one-sixth of the roasted pepper and cheese filling into the centre, then carefully bring the edges of the dough together over the filling, pinching firmly to seal. Turn it seam-side down and gently roll into a flat round approximately 20 cm (8 inches) in diameter. Take care not to press too firmly or tear the dough, as any holes could allow the filling to escape during cooking. Repeat with the remaining dough and filling until you have 6 stuffed flatbreads, keeping them covered with a clean kitchen towel while you finish shaping the rest.
5
Heat a dry frying pan over medium-low heat. There is no need to add any oil. Starting with the flatbread you shaped first, carefully place it in the pan, seam-side up, and cook for a few minutes until the underside is golden brown. Flip and cook the other side until golden and the dough is cooked through. Adjust the heat if necessary to prevent the outside from browning too quickly before the centre is cooked. Repeat with the remaining flatbreads, stacking them on a plate and covering with a clean kitchen towel to keep them soft and warm.

In a small bowl, combine the olive oil, paprika and finely chopped coriander. Brush the warm flatbreads with the fragrant paprika oil and serve immediately, while the bread is still soft and the cheese is beautifully melted. Enjoy while still warm!
Keep the dough soft: Avoid adding extra flour while kneading, even if the dough feels slightly sticky at first. A little olive oil on your hands and work surface will make it easier to handle and help keep the flatbreads soft.
Roasting the peppers and garlic: You can use either an air fryer or an oven. Place the garlic bulb cut-side down to prevent the exposed cloves from burning. The peppers should be tender with slightly charred skins.
Remove excess moisture: Roasted peppers can release quite a bit of liquid. Drain off any excess before mixing them with the cheese to prevent the filling from becoming too wet.
Cheese options: I love the combination of cheddar and mozzarella for its rich flavour and lovely melted texture, but you can experiment with other good melting cheeses, such as Gouda or Monterey Jack.
Fresh herbs: Coriander adds a lovely freshness, but if you're not a fan, you can replace it with flat-leaf parsley.
Shaping the flatbreads: Roll the stuffed dough gently to avoid tearing it. If a little filling escapes, simply pinch the dough back together before cooking.
Cooking temperature: Keep the heat at medium-low so the flatbreads have enough time to cook through without burning on the outside. If they brown too quickly, reduce the heat.
Storage and reheating: Store leftover flatbreads in an airtight container in the fridge for up to 3 days. Reheat in a dry frying pan over low heat until warmed through and the cheese has melted again.
Freezing: Once completely cooled, freeze the cooked flatbreads for up to 2 months, separating them with baking parchment to prevent sticking. Thaw in the fridge overnight before reheating in a frying pan.
