Instructions

  1. Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper.
  2. Make a slit down the side of each date and remove the pit. Stuff with a little goat cheese, about four pistachios, and a few thyme leaves. Set aside.
  3. Roll out the puff pastry into a rectangle, about 24 × 36 cm (9½ × 14 inches). From the long side, cut it into 18 strips, each roughly 2 cm (¾ inch) wide and 24 cm (9½ inches) long.
  4. Wrap one strip around each stuffed date and place them on the prepared tray. Whisk the egg yolk with the milk and brush over the pastry.
