What makes these Strawberry Nutella Puffs so special is how a few well-chosen ingredients come together to create something truly indulgent:

  • Nutella – Rich, smooth and perfectly balanced, it melts into a warm, chocolatey centre without the need for any extra sweeteners.
  • Strawberries – Fresh and juicy, they add natural sweetness and a light freshness that cuts through the richness of the chocolate.
  • Egg yolk and milk – Combined to create a simple egg wash that gives the pastry its deep golden colour and glossy finish.
  • Icing sugar and mint – A final dusting of icing sugar adds a bakery-style touch, while mint brings a fresh, decorative finish.

How to Make Strawberry Nutella Puffs

Preparing the Puff Pastry

Start by preheating the oven to 190 C / 375 F with the fan setting on and lining a large baking tray with parchment paper.

Roll the ready-rolled puff pastry into a neat rectangle measuring 24 x 36 cm, or about 9.5 x 14 inches, then cut it into 18 equal squares. Using a 4 cm (1.6 inch) round cutter, gently cut the centre out of 9 of the squares. These will become the top layer, creating a raised border that helps the pastry puff beautifully in the oven.

Place each cut-out square on top of a solid square, lining up the edges, then transfer them to the prepared baking tray, leaving a little space between each one.

Adding the Filling

Spoon around 1 teaspoon of Nutella into the centre of each puff. A little goes a long way here, too much filling can leak out as the pastry bakes and stop it from rising properly. Place one strawberry on top of the Nutella, cut side down, so it sits neatly and keeps the pastry crisp.

Egg Wash and Finishing

In a small bowl, mix the egg yolk with the milk until smooth. Lightly brush the egg wash over the exposed puff pastry, taking care to avoid the Nutella and strawberry. This helps give the pastry a deep, even golden colour once baked.

Baking and Serving

Bake in the preheated oven for 10 to 12 minutes, until the pastry is fully puffed, crisp and beautifully golden. As the puffs bake, the Nutella softens into a warm, chocolatey centre while the strawberries gently soften, releasing just enough juice to enhance the flavour.

Remove the puffs from the oven and let them cool for a few minutes before serving. The Nutella will be very hot straight from the oven and needs a little time to settle. Finish with a light dusting of icing sugar and a few fresh mint leaves.   1. Preheat the oven to 190 C / 375 F with the fan (convection) on. Line a baking tray with parchment paper.
  2. Roll the puff pastry into a neat rectangle measuring 24 x 36 cm, which is approximately 9.5 x 14 inches. Cut the pastry into 18 equal squares. Using a 4 cm (1.6 inch) round cookie cutter, cut a circle from the centre of 9 of the squares. Place one cut-out square on top of each solid square, lining up the edges to create a raised border. Transfer the layered pastry squares to the prepared baking tray.
    Do not waste the pastry cut-outs. Brush them with the remaining egg wash, bake alongside the puffs, and serve them for dipping into extra Nutella.
  3. Spoon about 1 teaspoon of Nutella into the centre of each puff, then place one strawberry on top, cut side down. In a small bowl, mix the egg yolk with the milk. Brush the egg wash evenly over the exposed puff pastry, avoiding the Nutella and strawberries.
  4. Bake for 10 to 12 minutes, or until the pastry is well risen and beautifully golden.
  5. Remove from the oven and allow to cool slightly. Dust with icing sugar and finish with a few fresh mint leaves before serving.

Note

  • Use cold puff pastry for best results. Keep the pastry in the fridge until you are ready to cut and assemble, as cold pastry puffs higher and gives cleaner edges.
  • Do not overfill with Nutella. About one teaspoon per puff is enough; too much will leak during baking and prevent the pastry from rising properly.
  • You can substitute the strawberries with banana slices or other fruits such as raspberries, sliced pears or cherries.
  • Bake until properly golden. Pale pastry will be soft rather than crisp, so let the puffs colour well for the best texture.
  • Let them cool slightly before serving. The Nutella will be very hot straight from the oven and needs a few minutes to settle.
  • Serve the same day for best results. If reheating, place the puffs in a preheated oven at 160 C / 320 F for 5 to 6 minutes to restore crispness.
