How to Make Mini Cheeseburger Puff Pastry Bites

Preparing the Beef Filling

Start by heating 1 tablespoon of olive oil in a frying pan over medium heat. Add the finely chopped red onion and cook for 2 to 3 minutes until softened and fragrant, stirring occasionally to prevent browning too quickly. Add the minced beef, season with salt and freshly ground black pepper, and cook for 8 to 10 minutes. Break the beef into small pieces with a spoon as it browns. Continue cooking until the meat is fully cooked, nicely caramelised and there is no excess moisture left in the pan. Proper browning here builds flavour, so do not rush this step. Remove the pan from the heat and allow the mixture to cool slightly. This is important, as adding hot filling directly into the pastry can soften it and affect how well it rises in the oven. Once slightly cooled, stir in the mustard, ketchup and mayonnaise until evenly combined.

The mixture should be juicy but not overly wet. Set aside. The filling can be prepared up to 24 hours in advance and stored in the fridge.

Preparing the Puff Pastry Cups

Preheat the oven to 200°C (400°F), fan assisted, and generously grease a 12-hole muffin tin with olive oil to prevent sticking.

Roll out the puff pastry into a rectangle approximately 24 x 36 cm (9½ x 14¼ inches). Cut it into 12 equal squares, each roughly 8 x 8 cm (3 x 3 inches).

Gently press each square into the muffin wells, allowing the corners to extend slightly above the rim. This creates crisp, golden edges once baked. Ensure the base sits flat against the tin without stretching the pastry.

Assembling and Baking

Spoon half of the beef mixture evenly into the prepared pastry cups, pressing it down lightly so it sits neatly but not compacted. Top each cup with one quarter slice of burger cheese

Divide the remaining beef mixture between the cups, then place two slices of cherry tomato on top of each. Finish with the remaining cheese.

Bake for 15 to 17 minutes, or until the pastry is deeply golden, puffed and crisp. For an extra grilled finish, you can briefly torch the tops for a few seconds until lightly blistered.

Allow the Mini Cheeseburger Puff Pastry Bites to cool in the tin for 5 minutes before carefully removing them with a silicone spatula. Garnish with freshly chopped parsley and serve warm.
