  1. Preheat the oven to 190°C (375°F) and line two baking trays with parchment paper.
  2. In a food processor, blend the shallots, tomato, chilli pepper, coriander, and olive oil until smooth. Transfer the mixture to a bowl with the ground beef. Add salt, pepper, ground coriander, and paprika. Mix until fully combined.
  3. Roll out the puff pastry into a rectangle (approx. 24 x 36 cm / 9.5 x 14 inches) and spread the beef mixture evenly over the surface. Slice the pastry lengthwise into three equal strips (each 12 x 24 cm / 4.75 x 9.5 inches), then roll each strip tightly from the long edge to form three logs.
  4. Slice each roll into 12 pieces, about 2 cm thick (¾ inch). If the pastry is too soft to cut, place the rolls in the freezer for 5–10 minutes to firm up.
