  1. Preheat the oven to 190C/375F  with the convection setting on. Place the cherry tomatoes in a baking dish, cut off the top of the garlic bulb and place it in the middle. Drizzle with 2 tbsp olive oil, 1 tbsp balsamic vinegar and sprinkle with Mediterranean spice mix. Roast for 35-40 minutes.

  2. Meanwhile, cut the bread rolls in half lengthwise and place them into another baking dish. Drizzle with olive oil, sprinkle with Mediterranean spice mix and bake for 10-15 minutes or until golden brown. You can place them in the oven after the tomatoes have been in for 20 minutes, so that everything is ready at the same time.

  3. While the bread and tomatoes are cooking, prepare the broccolini. Heat a pan with 1 tbsp olive oil, add the broccolini, drizzle with the remaining balsamic vinegar and add pine nuts, salt and pepper. Cook for a few minutes, stirring occasionally until the broccolini is tender.

  4. Once the garlic is roasted, let it cool and then squeeze it out.
  5. To assemble, spread 2 cloves of garlic on each toast, top with goat cheese, 2 cherry tomatoes, the cooked broccolini and pine nuts. Garnish with chopped chives and enjoy!
