- Make sure the spinach is very well drained. Any excess moisture will make the rolls soft instead of crispy. Squeeze it thoroughly with your hands before chopping.
- Do not soak the rice paper for too long. A quick dip in the egg mixture is enough. It will continue to soften as it rests. Over-soaking will make it tear and harder to roll.
- Shape the filling into a long, thin line across the rice paper, leaving a small gap at the edges. This helps prevent the filling from spilling out as you roll.
- These are best enjoyed fresh while crispy. If they soften, you can easily reheat them in the air fryer at 180°C/375°F for 2 to 3 minutes to bring back the crunch.
