Sticky Peach and Pistachio Buns: Flaky, Fruity and Irresistibly Caramelised

These Sticky Peach and Pistachio Buns bring all of those textures together in one seriously satisfying bake. Soft caramelised peaches are rolled inside flaky pastry, while a buttery brown sugar and pistachio topping bubbles underneath as the buns bake. Once flipped, that hidden layer becomes the star, coating every swirl in sticky caramel and roasted nuts. Simple Ingredients, Big Flavours
One of my favourite things about these peach puff pastry buns is that the ingredient list is surprisingly simple. There is no homemade dough, complicated custard or lengthy proving involved. Instead, ready-rolled puff pastry does the hard work, while fresh peaches, brown sugar, lemon and pistachios create a filling that tastes bright and summery. The caramel underneath brings richness without overwhelming the fruit. It is the same approach I love in recipes such as my Pistachio Puffs and Easy Fig Puffs with Goat Cheese where a handful of well-chosen ingredients turns one sheet of pastry into something that looks far more elaborate than it actually is.
Peaches – Choose ripe but still firm peaches. They should be sweet and fragrant but not so soft that they release excessive liquid while cooking.
Brown sugar – Used both in the peach mixture and caramel topping, brown sugar adds sweetness with a deeper caramel flavour than white sugar.
Butter – Gives the peach filling richness and forms the base of the sticky caramel topping.
Lemon zest – A little lemon zest cuts through the sweetness and gives the peaches a fresher, brighter flavour.
Pistachios – Added inside the buns and underneath them, pistachios bring crunch, colour and a rich nutty contrast to the fruit.
Puff pastry – Ready-rolled puff pastry keeps this recipe wonderfully straightforward while creating all those crisp, buttery layers.
Double or heavy cream – Just a small amount transforms the brown sugar and butter into a smooth, silky caramel.
Vanilla and salt – Vanilla rounds out the sweetness, while a pinch of salt makes the caramel and pistachio flavours stand out.
How to Make Sticky Peach and Pistachio Buns
These buns are straightforward to make, but a few small details make a big difference to the final texture. The peach filling needs to cool completely before it is spread over the pastry, and the sliced buns should stay chilled while you prepare the caramel. This helps the puff pastry hold its shape and bake into defined, flaky layers.
Preparing the Peach Filling
Start with the peach filling, as it needs time to cool to room temperature before assembling the buns. You can also prepare it a day in advance and keep it refrigerated until needed. To remove the skins, bring a pot of water to the boil. Add the peaches and blanch them for about 1 minute, then immediately transfer them to a bowl of ice-cold water to stop the cooking process. Pat the peaches dry, peel away the skins, cut them in half and remove the stones. Dice the peach flesh into small pieces.

Melt the butter in a frying pan, then add the diced peaches, brown sugar and lemon zest. Stir everything together and cook for around 10 minutes, stirring occasionally, until the peaches have softened and most of the excess liquid has evaporated. Stir through the crushed pistachios, remove the pan from the heat and leave the filling to cool completely to room temperature.

Rolling and Cutting the Puff Pastry Buns
Roll the puff pastry into a rectangle measuring approximately 36 × 24 cm (14 × 9½ inches). Spread the cooled peach mixture evenly over the pastry, leaving a small border of approximately 1 cm (½ inch) around the edges. This helps prevent the filling from spilling out as you roll the pastry.

Starting from one of the shorter sides, roll the pastry tightly into a log. Try to keep the roll even from one end to the other so the buns are similar in size. Using a thin piece of thread or a sharp knife, slice the log into 12 equal pieces, each approximately 2 cm (¾ inch) thick. Transfer the sliced buns to the fridge while you prepare the caramel. Keeping them chilled at this stage helps the puff pastry stay firm and maintain its shape.

Preparing the Oven and Baking Dish
Preheat the oven to 190°C (375°F) and line a 25 cm (10-inch) round baking dish with baking parchment. Make sure the base is completely covered, as the caramel will sit directly on top of the parchment.
Making the Caramel Pistachio Topping
Add the unsalted butter, brown sugar, double or heavy cream, vanilla powder and a pinch of salt to a small saucepan. Place the saucepan over low to medium heat and bring the mixture to a gentle boil, stirring constantly. Once it begins to bubble, reduce the heat to low and simmer for around 5 minutes, stirring occasionally. Continue cooking until the sugar has fully dissolved and the caramel becomes smooth, silky and glossy.

Assembling the Buns
Pour the warm caramel into the lined baking dish and spread it evenly over the base. Sprinkle the crushed pistachios evenly over the caramel.

Take the chilled pastry rolls from the fridge and arrange them cut-side up over the pistachios. Leave a little space between each bun, as the puff pastry will expand while baking.

Baking the Buns
Bake for 30–35 minutes, or until the buns are well puffed, golden brown and fully cooked through. The tops should be deeply golden rather than pale, and the pastry in the centre of the buns should look cooked and flaky.

Flipping and Serving
Remove the baking dish from the oven and allow the buns to cool slightly before flipping them. Place a serving plate slightly larger than the baking dish over the top. Carefully invert the dish so the buns release onto the plate. Lift away the baking dish, then gently peel off the baking parchment to reveal the glossy caramelised pistachio topping underneath.

Allow the buns to cool a little more if needed, then serve them warm or at room temperature.

Why We Love Sticky Peach and Pistachio Buns
These buns are all about contrast. The pastry is crisp and flaky around the edges but softer where it meets the juicy peach filling, the pistachios add crunch, and the brown sugar caramel becomes sticky and glossy as it bakes. Peach and pistachio work particularly well together because the delicate sweetness of the fruit allows the richer, nuttier pistachio flavour to come through, while lemon zest prevents the whole dessert from tasting too heavy. 1tbsp butter

2tbsp double cream (heavy cream)

Prepare the peach filling first, as it needs to cool completely before you assemble the buns. You can also make it a day ahead and keep it refrigerated. To peel the peaches, bring a saucepan of water to the boil and blanch them for about 1 minute. Immediately transfer them to a bowl of ice-cold water, then pat dry and peel away the skins. Halve the peaches, remove the stones and finely dice the flesh. Melt the butter in a frying pan over medium heat, then add the peaches, brown sugar and lemon zest. Cook for about 10 minutes, stirring occasionally, until the peaches have softened and most of the excess liquid has evaporated. Bake for 30–35 minutes, or until the buns are puffed, deeply golden and cooked through. Remove from the oven and carefully place a serving plate slightly larger than the baking dish over the top. While the caramel is still warm, invert the dish to release the buns onto the plate. Carefully peel away the baking parchment to reveal the sticky caramelised pistachio topping. Leave to cool slightly before serving. These buns are delicious served warm or at room temperature.
Make sure the peach filling is completely cool before spreading it over the puff pastry. A warm filling can soften the pastry and make it difficult to roll.
Cook the peaches until most of the excess liquid has evaporated. A very wet filling can make the buns soggy and cause the filling to leak out during baking.
Keep the puff pastry cold while working with it. Chilling the sliced buns while you prepare the caramel helps the pastry hold its shape and puff up properly in the oven.
Use ripe but still firm peaches. Very soft or overripe peaches tend to release more liquid during cooking.
Let the baked buns cool slightly before carefully inverting them onto a serving plate. Peel away the baking parchment to reveal the caramelised pistachio topping.
The buns are best served freshly baked, either slightly warm or at room temperature.
