How to Make Easy Berry Puff Squares
Prepare the Oven and Pastry
Creating these Easy Berry Puff Squares is surprisingly simple, yet each step adds to their impressive, bakery-style finish. Start by preheating your oven to 200°C / 400°F with convection on and line a baking tray with parchment paper.
Roll your puff pastry into a neat rectangle, about 36 x 24 cm (14 x 9½ inches), and cut it into 12 equal squares, roughly 8 x 8 cm (3 x 3 inches) each. Working with one square at a time, lightly score or simply visualise a smaller square in the centre, about 1 cm in from each edge. This helps guide the next cuts, giving you a clear idea of where to place the berries and folds.

Make the Corner Cuts
Starting with one of the inner corners, cut along the side towards the centre, stopping about 0.5 cm before reaching the middle. Then cut in the opposite direction from the same corner, creating two angled cuts at each corner. Repeat this process for the remaining inner corners.

Fill and Shape the Pastries
Place ½ teaspoon of custard in the centre of the inner square, then add ½ teaspoon of berry jam on top. Arrange one berry in the middle of each side of the outer square.

Gently fold the four corners of the outer square towards the centre. Add another ½ teaspoon of custard in the middle to secure the folds, then top with a berry, which helps hold everything in place. Repeat this process with the remaining pastry squares and transfer them to your prepared baking tray.

Bake and Finish
Brush each puff lightly with the egg wash and sprinkle with crushed pistachios. Slide the tray into the oven and bake for about 15 minutes, until the pastry is puffed, golden, and irresistible. Once baked, allow the pastries to cool slightly before dusting with icing sugar. Freezing Puff Squares

Lightly score, or visualise, a smaller square inside, about 1 cm (3/8 inch) in from each edge, creating a 6 x 6 cm (2 3/8 x 2 3/8 inch) inner square. Starting with one of the inner corners, cut from that corner along the side towards the middle, stopping about 0.5 cm (1/4 inch) before reaching the centre. Repeat the same from the same corner in the opposite direction, stopping at the same point. Repeat this process with the three remaining corners.

Place 1/2 tsp of custard in the centre of the inner square, then place 1/2 tsp of berry jam on top. Place one berry of your choice in the middle of each outer square side. Then fold the four corners of the outer square towards the centre. Place 1/2 tsp of custard in the middle to secure the folds, and top with a berry to hold everything in place. Repeat with the remaining ingredients and transfer the pastries to the prepared baking tray.

Combine the egg yolk with the milk and brush the pastry lightly. Sprinkle crushed pistachios on top and bake for about 15 minutes, or until puffed and golden. Allow the puffs to cool slightly, then dust with icing sugar before serving. Enjoy!
