How to Make Nutella Puff Pastry Twists
Prepare the Pastry Base
Start by preheating the oven to 200°C (400°F) and greasing a 12-cup muffin tin well with butter, making sure every cup is fully coated so the pastry doesn’t stick. Unroll the puff pastry into a neat rectangle, about 24 × 32 cm (9½ × 12½ inches). Spread a smooth, even layer of Nutella all the way to the edges, then sprinkle the chopped pecans evenly on top.

Fold and Layer the Pastry
Working from one short side, fold one-third of the pastry towards the centre,

then fold the other short side in by one-third so the edges meet neatly in the middle — just like folding a letter.

Fold it in half lengthways to create beautifully layered dough.

Cut the sheet horizontally into strips about 2 cm (¾ inch) wide.

Shape the Twists
Take each strip, gently stretch it, twist it a few times,

and roll it into a spiral.

Nestle each spiral into the greased muffin tin, tucking the ends underneath so they hold their shape. Whisk together the egg yolk and milk, then brush the tops of the twists for a glossy golden finish.

Bake and Finish
Bake for about 15 minutes, or until the pastry is puffed and golden brown. Let them cool slightly in the tin, then, using a silicone spatula, gently lift them out and transfer to a wire rack. Once cooled, dust lightly with icing sugar for that final bakery-style touch.

Note
- Use chilled pastry: Puff pastry is easiest to work with when it’s cold. If it warms up too much, it becomes sticky and difficult to fold neatly, so keep it in the fridge until you’re ready to use it.
- Nutella: If your Nutella is quite firm, warm it slightly in the microwave for 10–15 seconds so it spreads smoothly without tearing the pastry.
- Sharp knife = clean layers: When cutting your strips, use a very sharp knife for crisp edges. Clean cuts help the pastry rise evenly in the oven and show off those beautiful flaky layers.
- Grease thoroughly: Butter every part of the muffin tin well — base and sides — to prevent sticking. A silicone muffin mould also works brilliantly and makes removal even easier.
- Twist gently: Avoid pulling too hard when twisting the strips. A few light twists are enough to create a defined swirl without stretching or tearing the dough.
- Cooling before dusting: Allow the twists to cool completely before adding icing sugar; otherwise, the sugar will melt on contact with warm pastry and lose its delicate finish.
- Storage: These twists are best enjoyed the same day but can be stored in an airtight container for up to 2 days. Reheat briefly in a 160°C (320°F) oven for 5–8 minutes to restore their crispness.
