How to Make Cheesy Beef Puffs
Prepare the Beef Filling
First, heat the olive oil in a large pan over medium-low heat. Once warm, add the finely chopped red onion and cook for about 2 minutes, stirring occasionally, until softened and fragrant. Next, add the minced beef. Season with salt and pepper, then cook for about 5 minutes, breaking it up with a spoon as it browns. Then stir in the dried parsley, paprika, nutmeg, tomato paste, and water. Mix well so everything is evenly coated. Cook for another 5 minutes, or until the beef is fully cooked and nicely browned. Once done, remove from the heat and let the filling cool completely before assembling. If you want to get ahead, you can make the filling a day in advance and store it in the fridge.
Prepare the Oven and Pastry
Meanwhile, preheat your oven to 190 C fan (375 F) and line a baking tray with parchment paper. Unroll the puff pastry and shape it into a rectangle roughly 24 x 36 cm (9½ x 14¼ in). Then cut it into 6 equal squares, each approximately 12 x 12 cm (4¾ x 4¾ in)

Fill and Shape the Puffs
Once the filling is fully cooled, divide it evenly between the pastry squares, placing it right in the centre of each one.

After that, bring all the corners toward the middle and seal well to form a parcel. Gently flatten each one with the palm of your hand, then flip it so the sealed side is underneath.

Using a sharp knife, cut a cross on top of each puff. Then transfer them to the prepared baking tray. After that, carefully pull the cut edges slightly outward to open and reveal the filling.

Brush, Top, and Bake
In a small bowl, mix the egg yolk with the milk. Brush the pastry edges with this mixture so they bake up glossy and golden. Then sprinkle the tops generously with grated mozzarella.

Bake for 17 to 20 minutes, or until the pastry is beautifully puffed and golden. Once baked, remove from the oven and finish with freshly chopped coriander. Serve warm while the pastry is crisp and the filling is juicy.

Customisable and Family Friendly

Storage: Store baked Cheesy Beef Puffs in an airtight container in the fridge for up to 3 days. Reheat in the oven at 160C/200F, fan for 6 to 8 minutes to restore crispness. Avoid microwaving if possible, as the pastry can become soft.
Freezing before baking: Assemble the puffs but do not brush with egg wash or add cheese. Place them on a tray and freeze until solid, then transfer to a freezer bag or container. Freeze for up to 2 months. Bake from frozen at 190 C fan, adding about 5 to 8 extra minutes to the baking time. Brush with egg wash and add cheese just before baking.
Freezing after baking: Allow the puffs to cool completely, then freeze in an airtight container for up to 1 month. Reheat from frozen in the oven at 180C/350F fan until heated through and crisp.
Make ahead tip: The beef filling can be prepared up to 24 hours in advance and stored in the fridge. Make sure it is fully cooled before filling the pastry.
Pastry tip: Work with cold puff pastry for the best rise and flakiness. If the pastry becomes soft while shaping, chill it in the fridge for 10 minutes before continuing.
