Cottage Cheese Apricot Galette: Crisp Filo, Creamy Filling and Juicy Summer Fruit

This Cottage Cheese Apricot Galette is everything I want from an easy summer bake: golden, crisp pastry, a creamy centre and plenty of fresh fruit. Instead of making a traditional galette dough, this recipe uses layers of filo pastry brushed with melted butter, giving you an incredibly light and crisp base with very little preparation. The centre is filled with cottage cheese blended with yogurt, egg yolks, lemon zest and honey, then topped with slices of fresh apricot that soften beautifully in the oven. Simple Ingredients, Big Flavours

There is nothing complicated hiding in this Cottage Cheese Apricot Galette. The recipe relies on a handful of ingredients that each bring something different to the finished bake, from the crisp filo and creamy cheese filling to juicy apricots, almonds and aromatic thyme. It has the same simple-but-impressive appeal as my Baked Nectarines with Honeyed Cottage Cheese & Almonds and Nectarine Frangipane Tartlets.

  • Filo pastry – Four sheets are all you need to create the beautifully crisp base. Arranging them at different angles gives the galette its rustic circular shape.
  • Butter – A light brushing of melted butter between the filo sheets helps separate the delicate layers as they bake and gives the edges their golden colour.
  • Cottage cheese and yogurt – Blended together, they create a smooth, creamy base that feels lighter than a traditional cheesecake-style filling.
  • Egg yolks – The yolks enrich the cottage cheese mixture and help it set gently as the galette bakes.
  • Apricots – Fresh apricots bring natural sweetness, gentle acidity and plenty of juicy fruit flavour.
  • Lemon zest and honey – Lemon keeps the creamy filling fresh and fragrant, while honey adds enough sweetness without overwhelming the apricots.
  • Flaked almonds and thyme – Almonds add a lovely crunch around the golden filo edges, while a few thyme leaves bring a subtle herbal freshness that works surprisingly well with apricots and honey.

How to Make Cottage Cheese Apricot Galette

This Cottage Cheese Apricot Galette is much easier to make than its beautiful finished appearance suggests. There is no dough to prepare, chill or roll out because the base is made from ready-made filo pastry. The main thing to remember is that filo dries out very quickly, so keep any sheets you are not currently working with covered with a damp kitchen towel.

Prepare the Cottage Cheese Filling

Start with the creamy filling. Add the cottage cheese, yogurt, egg yolks, lemon zest and honey to a food processor and process until completely smooth and creamy. The honey gives the filling a gentle sweetness without overpowering the fresh apricots. You can always adjust it slightly to taste depending on how sweet your fruit is. Once the filling is smooth, set it aside while you prepare the pastry.

Layer the Filo Pastry

Preheat the oven to 180°C / 350°F and place a large sheet of baking parchment on a flat work surface. Assembling the galette directly on the parchment makes it much easier to transfer to the baking tray later. Place the first filo sheet onto the parchment and lightly brush it with some melted butter. Lay the second sheet across the first at a different angle, almost creating a cross, then brush it lightly with butter as well. Add the third filo sheet at another angle, positioning it so that it covers some of the empty spaces between the first two sheets. Brush again with melted butter. Finish with the fourth sheet, placing it at another angle to cover the remaining gaps and create a wider, roughly circular pastry base. Brush the top lightly with butter.

Do not worry about making the filo perfectly symmetrical. The slightly uneven edges are exactly what give the finished galette its beautiful rustic shape.

Add the Filling and Apricots

Spoon the cottage cheese filling into the centre of the layered filo and spread it into an even circle approximately 20 cm / 8 inches wide. Leave a generous border of uncovered filo around the outside because you will need this pastry to form the edges of the galette.

Thinly slice the apricots and gently pat them dry before adding them to the filling. This removes excess surface moisture and helps prevent the centre of the galette from becoming too wet as it bakes. Arrange the apricot slices evenly over the cottage cheese filling. Slightly overlap them as needed, making sure the fruit is distributed nicely across the centre.

Shape the Galette

Now begin folding the uncovered filo towards the centre. Work your way around the galette, gently lifting one section at a time and folding it over the outer edge of the filling. Allow the filo to naturally pleat and slightly overlap as you go. There is no need to create perfectly even folds, and the irregular edges will become beautifully crisp once baked.

Keep the centre open so that plenty of the sliced apricots remain visible. Brush the folded filo edges with the remaining melted butter, then scatter flaked almonds over the pastry.

Transfer and Bake

Carefully transfer the galette to a baking tray by gently sliding the baking parchment, with the galette still sitting on top, directly onto the tray. This is much easier than trying to lift the assembled galette itself and helps keep the delicate filo layers intact. Bake for 35–40 minutes, or until the filo is beautifully golden and crisp around the edges. Keep an eye on it during the final few minutes because filo can colour quite quickly. You are looking for crisp, flaky, golden layers around the outside and a softly set cottage cheese filling in the centre.

Finish and Serve

Remove the galette from the oven and drizzle a little honey over the warm apricots.Finish with fresh thyme leaves, which add a subtle aromatic freshness that works beautifully with the apricot, honey and creamy cottage cheese filling. Leave the galette to cool slightly before slicing. This gives the filling a little time to settle while the filo remains wonderfully crisp. Serve slightly warm or at room temperature and enjoy.

Why We Love Cottage Cheese Apricot Galette

This Cottage Cheese Apricot Galette is one of those desserts that looks far more elaborate than the effort it takes to make. The filo pastry becomes wonderfully crisp and golden around the edges, while the centre stays soft and creamy thanks to the cottage cheese and yogurt filling. Fresh apricots bring a lovely balance of sweetness and gentle tartness, with lemon zest keeping everything bright and a little honey adding just enough sweetness without making the dessert heavy. Flaked almonds add crunch, while fresh thyme gives the finished galette a subtle aromatic touch that works beautifully with the fruit. I especially love the contrast between the delicate, flaky filo and the juicy baked apricots, making every slice interesting without needing complicated pastry techniques. If you enjoy fruity filo desserts, you may also love my Raspberry Ruffled Milk Pie or Easy Fig Puffs with Goat Cheese.

Perfect for Any Occasion

This Cottage Cheese Apricot Galette is a beautiful choice whenever you want an easy dessert that still feels special enough to bring to the table. It is perfect for summer lunches, weekend brunches, afternoon coffee, garden gatherings or a relaxed dessert after dinner, particularly when fresh apricots are at their best. Because it is served as one large rustic galette, there is no complicated individual assembly, and you can simply slice it into portions when you are ready to serve. It is delicious slightly warm, but it also works beautifully at room temperature, which makes it particularly convenient when entertaining. The fresh fruit and creamy filling keep it feeling lighter and fresher than many traditional pastry desserts, while the golden filo still gives you plenty of crunch. Description

This Cottage Cheese Apricot Galette is a simple summer dessert made with crisp layers of filo pastry, a creamy cottage cheese filling and plenty of fresh apricots. Blending the cottage cheese with yogurt, egg yolks, lemon zest and honey creates a smooth filling that is lightly sweet with a fresh citrus flavour. The apricots soften as they bake, becoming juicy while still keeping their slight tartness. Flaked almonds scattered over the folded filo edges add extra crunch as the pastry turns golden and crisp in the oven. A final drizzle of honey and a few fresh thyme leaves bring a lovely balance of sweetness and freshness. It is an easy but beautiful dessert to serve slightly warm or at room temperature during apricot season.

Instructions

  1. Prepare the cottage cheese filling. Add the cottage cheese, yogurt, egg yolks, lemon zest and honey to a food processor and process until smooth and creamy. Set aside.
  2. Preheat the oven to 180°C (350°F). Place a sheet of baking parchment on a flat work surface. Working with one sheet of filo at a time, keep the remaining sheets covered with a damp kitchen towel to prevent them from drying out. Place the first filo sheet on the parchment and lightly brush it with some of the melted butter. Lay the second sheet across the first at a different angle, creating a cross-like shape, and brush with more butter. Add the third sheet at another angle to cover some of the remaining gaps and create a wider, roughly circular base, then brush again with butter. Finish with the fourth filo sheet, positioning it across the others so the pastry overlaps evenly and any remaining gaps are covered. Brush lightly with melted butter.
  3. Spoon the cottage cheese filling into the centre of the layered filo and spread it into an even circle approximately 20 cm (8 inches) in diameter, leaving a generous border of filo around the outside. Arrange the thinly sliced apricots over the filling, slightly overlapping them if needed. Working your way around the galette, gently lift and fold the exposed filo edges in towards the centre, allowing them to naturally pleat and slightly overlap around the apricots. The centre should remain open so the fruit is visible.
  4. Brush the folded filo edges with the remaining melted butter and sprinkle them with flaked almonds. Carefully transfer the galette to a baking tray by gently sliding the baking parchment, with the galette on top, onto the tray.
  5. Bake for 35–40 minutes, or until the filo is beautifully golden and crisp. Remove from the oven, drizzle with honey and sprinkle with fresh thyme leaves. Leave to cool slightly before slicing and

Note

  • Keep the filo covered: Filo pastry dries out very quickly, so keep the sheets you are not working with covered with a damp kitchen towel.
  • Pat the apricots dry: Removing excess moisture helps prevent the cottage cheese filling and filo base from becoming soggy.
  • Choose ripe but firm apricots: Very soft or overripe fruit can release too much liquid during baking.
  • Adjust the sweetness: The amount of honey in the cottage cheese filling can be increased or reduced depending on how sweet your apricots are.
  • Layer the filo loosely: The sheets do not need to line up perfectly. Rotating them at different angles creates the rustic, roughly circular shape of the galette.
  • Watch the pastry towards the end: Filo can brown quickly, so start checking the galette during the final few minutes of baking.
  • Serving and storage: The galette is best enjoyed slightly warm or at room temperature while the filo is crisp. Store any leftovers covered in the refrigerator for up to 2 days.
