Cottage Cheese Apricot Galette: Crisp Filo, Creamy Filling and Juicy Summer Fruit
This Cottage Cheese Apricot Galette is everything I want from an easy summer bake: golden, crisp pastry, a creamy centre and plenty of fresh fruit. Instead of making a traditional galette dough, this recipe uses layers of filo pastry brushed with melted butter, giving you an incredibly light and crisp base with very little preparation. The centre is filled with cottage cheese blended with yogurt, egg yolks, lemon zest and honey, then topped with slices of fresh apricot that soften beautifully in the oven. How to Make Cottage Cheese Apricot Galette
This Cottage Cheese Apricot Galette is much easier to make than its beautiful finished appearance suggests. There is no dough to prepare, chill or roll out because the base is made from ready-made filo pastry. The main thing to remember is that filo dries out very quickly, so keep any sheets you are not currently working with covered with a damp kitchen towel.
Prepare the Cottage Cheese Filling
Start with the creamy filling. Add the cottage cheese, yogurt, egg yolks, lemon zest and honey to a food processor and process until completely smooth and creamy. The honey gives the filling a gentle sweetness without overpowering the fresh apricots. You can always adjust it slightly to taste depending on how sweet your fruit is. Once the filling is smooth, set it aside while you prepare the pastry.

Layer the Filo Pastry
Preheat the oven to 180°C / 350°F and place a large sheet of baking parchment on a flat work surface. Assembling the galette directly on the parchment makes it much easier to transfer to the baking tray later. Place the first filo sheet onto the parchment and lightly brush it with some melted butter. Lay the second sheet across the first at a different angle, almost creating a cross, then brush it lightly with butter as well. Add the third filo sheet at another angle, positioning it so that it covers some of the empty spaces between the first two sheets. Brush again with melted butter. Finish with the fourth sheet, placing it at another angle to cover the remaining gaps and create a wider, roughly circular pastry base. Brush the top lightly with butter.

Do not worry about making the filo perfectly symmetrical. The slightly uneven edges are exactly what give the finished galette its beautiful rustic shape.
Add the Filling and Apricots
Spoon the cottage cheese filling into the centre of the layered filo and spread it into an even circle approximately 20 cm / 8 inches wide. Leave a generous border of uncovered filo around the outside because you will need this pastry to form the edges of the galette.

Thinly slice the apricots and gently pat them dry before adding them to the filling. This removes excess surface moisture and helps prevent the centre of the galette from becoming too wet as it bakes. Arrange the apricot slices evenly over the cottage cheese filling. Slightly overlap them as needed, making sure the fruit is distributed nicely across the centre.

Shape the Galette
Now begin folding the uncovered filo towards the centre. Work your way around the galette, gently lifting one section at a time and folding it over the outer edge of the filling. Allow the filo to naturally pleat and slightly overlap as you go. There is no need to create perfectly even folds, and the irregular edges will become beautifully crisp once baked.

Keep the centre open so that plenty of the sliced apricots remain visible. Brush the folded filo edges with the remaining melted butter, then scatter flaked almonds over the pastry.

Transfer and Bake
Carefully transfer the galette to a baking tray by gently sliding the baking parchment, with the galette still sitting on top, directly onto the tray. This is much easier than trying to lift the assembled galette itself and helps keep the delicate filo layers intact. Bake for 35–40 minutes, or until the filo is beautifully golden and crisp around the edges. Keep an eye on it during the final few minutes because filo can colour quite quickly. You are looking for crisp, flaky, golden layers around the outside and a softly set cottage cheese filling in the centre.
Finish and Serve
Remove the galette from the oven and drizzle a little honey over the warm apricots.Finish with fresh thyme leaves, which add a subtle aromatic freshness that works beautifully with the apricot, honey and creamy cottage cheese filling. Leave the galette to cool slightly before slicing. This gives the filling a little time to settle while the filo remains wonderfully crisp. Serve slightly warm or at room temperature and enjoy.

Finish with the fourth filo sheet, positioning it across the others so the pastry overlaps evenly and any remaining gaps are covered. Brush lightly with melted butter.
