How to Make Guacamole Tortilla Cups

Prepare the Tortilla Cups

Start by preheating your oven to 190°C (fan). Using a 10cm cookie cutter or a knife, cut four rounds from each tortilla.

Brush both sides lightly with olive oil and gently press each round into a 12-well muffin tin. Keep an eye on them while baking, as tortillas can brown quickly. Bake for 7–8 minutes until golden and crisp.

Make the Guacamole Filling

While the tortilla cups bake, mash the avocados in a bowl. Stir in finely chopped cherry tomatoes, onion, chilli, coriander, lime juice, and a pinch of salt and pepper until well combined.

Assemble and Serve

  1. Preheat your oven to 190°C/375°F (convection on).
