Apricot Mascarpone Puffs: Flaky, Creamy and Filled with Juicy Apricots

Simple Ingredients, Big Flavours

One of the best things about these Apricot Mascarpone Puffs is that there is no complicated filling or long ingredient list. A few carefully chosen ingredients create the creamy, fruity and flaky combination that makes them so satisfying. Puff pastry

Ready-rolled puff pastry keeps preparation quick while still giving the puffs their light, buttery layers and crisp golden exterior.

Mascarpone and cream cheese

Mascarpone provides a rich, velvety base, while a little cream cheese adds subtle tang and gives the filling more structure.

Fresh apricots

Choose ripe but firm apricots. They soften beautifully during baking but should still be firm enough to hold their shape rather than collapsing into the filling.

Honey

Just a teaspoon is enough to gently sweeten the mascarpone mixture without overpowering the natural flavour of the apricots. You can adjust it according to how sweet your fruit is.

Lemon juice

A small amount brightens the mascarpone filling and balances the richness of the cheeses and pastry.

Egg yolk and milk

Whisked together, they create an egg wash that gives the puff pastry an appetising glossy, golden finish.

Toasted almond flakes

Apricot and almond are a classic combination. The toasted almonds add crunch and a gentle nutty flavour to the top of each puff.

Icing sugar

A light dusting after baking gives the pastries a simple bakery-style finish and just a final touch of sweetness.

How to Make Apricot Mascarpone Puffs

Prepare the Oven and Filling

Preheat the oven to 200°C/400°F fan and line a baking tray with baking parchment. In a small bowl, combine the mascarpone, cream cheese, honey and lemon juice. Mix well until the filling is smooth and fully combined. Taste and adjust the honey if needed, depending on how sweet your apricots are.

Roll and Cut the Puff Pastry

Roll out the puff pastry into a 24 x 36 cm (9 1/2 x 14 1/4 in) rectangle. Cut the pastry into 12 equal squares, each measuring approximately 8 x 8 cm (3 1/4 x 3 1/4 in).

Use a lattice pastry cutter to create a lattice pattern on six of the pastry squares. Leave the remaining six squares solid, as these will form the bases of the puffs. If you do not have a lattice pastry cutter, use a sharp knife to make several evenly spaced slits in six of the squares instead.

Fill the Pastry

Place the six solid pastry squares on a work surface. Spoon about 1 tablespoon of the mascarpone mixture into the centre of each square. Place one apricot half on top of the mascarpone filling, positioning it cut-side down. Keep the filling and fruit centred so there is enough pastry around the edges to create a secure seal.

Add the Lattice Tops and Seal

Place one lattice-patterned pastry square over each filled base. Gently press around the edges with your fingers to help the top and bottom layers of pastry stick together. Next, use a fork to press firmly around all four edges. This creates a stronger seal and helps prevent the pastry from opening while it bakes.

Use a sharp knife to trim the edges into straight, even lines. This final trimming step gives each puff a cleaner and neater finish.

Add the Egg Wash and Almonds

Transfer the assembled puffs to the prepared baking tray, arranging them with some space between each one so the pastry has room to expand as it bakes. In a small bowl, whisk together the egg yolk and milk until combined. Brush the mixture evenly over the tops of the puffs, then sprinkle with toasted almond flakes.

Bake the Apricot Mascarpone Puffs

Bake for about 15 minutes, or until the puff pastry has risen and turned golden. Remove the tray from the oven and allow the puffs to cool slightly. Once they are no longer piping hot, dust them with icing sugar before serving.

Note

  • Keep the puff pastry chilled until you are ready to work with it. If it becomes too soft, place it in the fridge for 10 to 15 minutes before assembling the puffs.
  • Choose ripe but firm apricots so they hold their shape during baking and do not release too much liquid.
  • Adjust the amount of honey to taste depending on the sweetness of your apricots.
  • When making the lattice pattern or cutting slits with a knife, leave a small border around the edges so the pastry is easier to seal.
  • Press the edges together well with your fingers first, then crimp firmly with a fork to help prevent the filling from leaking while baking.
  • Leave enough space between the puffs on the baking tray, as the pastry will expand as it bakes.
  • These puffs are best enjoyed on the day they are baked, while the pastry is still crisp and flaky.
